¡Señores, estos pancitos o panecillos, (como ustedes prefieran) son un escandalo! ¡Ahh que rico es este pancito caliente! Después de su boda, mi hermana Odile y mi cuñado Oscar, se fueron a vivir en Sao Paulo, Brasil. A Odile le encantó, el estilo de vida y las costumbres son similares a las nuestras, claro en una escala muchísimo mayor. Los platos son similares con platos que se comen aquí en República Dominicana, por ejemplo la Feijoada se acerca mucho a un sancocho de habichuelas; Munguzá es  un postre que se asemeja mucho al tradicional arroz con leche; Romeu e Julieta en portugués, es un postre se denomina de esta forma tan peculiar porque nace de la unión de dos elementos contrarios: el queso blanco y la Guayaba, muy popular aquí; la Coxinha es el equivalente de las sabrosas croquetas de pollo;   Pudim, que no es más que un flan de leche; la Tapioca es  también conocido como casabe de yuca. El equivalente de la receta de hoy Pao de Queijo (Brazilian Cheese Bread), en nuestra gastronomía actual sería una mezcla de bollito de yuca relleno de queso y una bolita de queso, por que está compuesto de harina de yuca (tapioca) y queso pero es un poco más ligero que un bollito.

Brazilian Cheese Bread

Para empezar el proceso verter el aceite, la leche y la sal en una cacerola grande, y colocar a fuego alto. Cuando la mezcla empiece a hervir, retirar del fuego de inmediato. Coloque esta mezcla en la batidora y agregue el la harina de tapioca, mezcle  hasta que la masa esté suave.

Luego agregue los huevos, uno a la vez y mezcle hasta que todo esté bien combinado. Luego añada el  queso y mezcle bien, obtendrá una masa espesa y grumosa.  Colocar en un molde de hacer panecillos o cupcakes sin engrasar. Espero que disfruten estos ricos bocaditos!

Ingredients

  • 1 taza de leche
  • 1 cucharadita de sal
  • 2 tazas de harina de tapioca
  • 1/2 taza de aceite
  • 2 huevos
  • 1 1/2 taza de queso parmesano

Instructions

  • Precaliente el horno a 350 F.
  • Verter el aceite, la leche y la sal en una cacerola grande, y colocar a fuego alto. Cuando la mezcla empiece a hervir, retirar del fuego de inmediato, y agregue y revuelva la harina de tapioca hasta que esté suave. Ponga a un lado para descansar durante 10 a 15 minutos.
  • Añada el queso y los huevos a la mezcla de tapioca hasta que esté bien combinado, la mezcla será espesa. Colocar en un molde de hacer panecillos o cupcakes sin engrasar.
  • Hornear en horno precalentado hasta que los panecillos estén ligeramente dorados, de 25 a 30 minutos.

Oh my! These little breads are so good when eaten just out of the oven! they are crazy good! After their wedding, my sister Odile and my brother-in-law Oscar, went to live in Sao Paulo, Brazil. Odile loved the lifestyle and customs because they are similar to ours, of course on a much larger scale. The dishes are similar to some dishes that are eaten here in the Dominican Republic, for example Feijoada is very close to a bean Sancocho; Munguzá is a dessert that is very similar to traditional rice pudding; Romeu e Julieta in Portuguese, is a dessert called this way so peculiar because it is born of the union of two opposing elements: the very popular white cheese and guava, here; the Coxinha is the equivalent of tasty chicken croquettes; Pudim, which is nothing more than a flan; Tapioca is also known as casabe bread. The equivalent of today’s recipe in today’s gastronomy muffin would be a mixture of cassava dumpling filled with cheese and a small cheese ball. This is made of cassava flour and cheese but is a bit lighter than a dumpling.

First, preheat oven to 350 F. The pour oil, milk, and salt into a large saucepan, and place over high heat. When the mixture comes to a boil, remove from heat immediately, and put on a stand up mixer, add  the tapioca flour and mix until smooth. Then add the cheese and eggs to the mixture of tapioca until well combined, the mixture will be thick. Place in a mold to make muffins or cupcakes ungreased.

Bake in preheated oven until muffins are lightly browned, 25 to 30 minutes.

    I don’t remember the name, but this kind of dough is quite common in Europe(except tapioca flour), and I like it. Besides, mixed with loads of cheese, these baked goodies are super delicious. Trow a few at me please – I’ll try to catch them:)

    • I love this cheese bread also!! it’s sooo good!! there are versions that include a bit of garlic as well, Yeah She lived in Sao Paulo for several years, now she lives in Florida! 🙂
