Cilantro and paprika potatoes salad – The Petit Gourmet
Every summer when you get invited to a BBQ party or a potluck you get the same question in your head – What am I going to bring?? why is this so difficult, then you go and think all the recipes you have had success with in the past and began discarding the ones you that you have already have with the same group of people or just some people in a group, the ones that didn’t had lots of compliments or for once you want just to be a little original and do not want to make your famous Grandma’s potato salad? been there! done that! Ha!
No wonder you are in the same predicament as I was for my last potluck, then I began thinking what flavors to mix with potatoes and BBQ grilled meat and came up with this beautiful and flavorful salad. I tried to lighten it the most so used non fat Greek yogurt, lots of great brands out there, that bring the creaminess that you are always expecting on a potato salad! So here it is …
Cilantro paprika potatoes salad
Ingredients
- 3 pounds of potatoes
- 2 tablespoons of olive oil
- 1/2 cup of low fat Greek yogurt
- 2 tablespoons of sherry vinegar
- 1/4 bunch of chives chopped
- 1/2 bunch of cilantro chopped
- 2 tablespoons of smoke paprika
- 1 teaspoon of sweet paprika
- 6 sliced of bacon baked and chopped
- 1/4 low fat cheddar cheese grated,
- 1/3 cup of low fat mayonnaise
- Salt and pepper
Instructions
- Pre heat your oven at 350F.
- In a baking dish put your bacon slices and bake until golden brown, about 15 minutes, then put over some absorbent paper towels to get all the grease and liquid out, when they are almost at room temperature cut into pieces and reserve.
- Cut the potatoes into bite sizes, then put them on another baking dish, sprinkle with the mix of both paprika, salt and pepper, then add then oil and mix well, cook until done, you'll know by pinching them with the tip of a knife or a fork, about 35 minutes.
- Let them completely cool down, while you wait, chopped all the herbs and prepare the dressing.
- When the potatoes are completely cooled, mix all ingredients together and finish by sprinkling the cheese on top.
Nutrition
For this recipe try using waxy potatoes like Red Bliss or New Potatoes, these have a low starch content and they hold their shape well after cooking. If you can find those try using something not too starchy like the Yukon Gold.

Ensalada de papas con cilantro y pimentón
Cada verano, cuando te invitan a una fiesta de barbacoa o una cena donde debes traer tu contribución, siempre te haces la misma pregunta en su cabeza – ¿Qué voy a traer ?? ¿por qué es tan difícil, luego vas pensar en todas las recetas que han tenido éxito en el pasado y comienzas descartando las que que ya has compartido con el mismo grupo de personas o sólo con algunas personas del grupo, para no repetir, luego descartas las que no han tenido un montón de elogios o por una vez, simplemente lo que desea es ser un poco original y no quieres hacer la fabulosa ensalada de papas de tu famosa abuela? créeme ya me ha pasado! ¡Ja!
No es extraño que estés en la misma situación que yo, para mi última fiesta, entonces empecé a pensar qué sabores que me encanta mezclar con papas y carne a la parrilla y se me ocurrió esta sabrosa ensalada. Traté de la aligerar la ensalada, utilizando yogur bajo en grasa, para tener esa textura cremosa que siempre uno espera de una ensalada de papas! Así que aquí está , los ingredientes son :
Ensalada de papas con cilantro y paprika
Ingredients
- 3 libras de papas
- 2 cucharadas de aceite de oliva
- 1/2 taza de yogur bajo en grasa griega
- 2 cucharadas de vinagre de jerez
- 1/4 manojo de puerro picado
- 1/2 manojo de cilantro picado
- 2 cucharadas de pimentón humo
- 1 cucharadita de pimentón dulce
- 6 rodajas de tocino cocido y picado
- 1/4 queso cheddar bajo en grasa rallado,
- 1/3 taza de mayonesa baja en grasa
- Sal y pimienta
Instructions
- Pre-calentar el horno a 350F.
- En una bandeja de hornear colocar las rebanadas de tocino y hornear hasta que estén doradas, unos 15 minutos, luego poner sobre algunas toallas de papel absorbente para sacar toda la grasa y líquido, cuando estén casi a temperatura ambiente cortar en trozos y reservar.
- Cortar las papas en cuadritos de un bocado y luego ponerlos en otra bandeja de hornear, espolvorear con la mezcla de ambos pimentones, sal y pimienta,luego añadir el aceite y mezclar bien, cocine hasta que estén tiernas, sabrás introduciendo la punta de un cuchillo o un tenedor, sin resistencia, aproximadamente 35 minutos.
- Deja que se enfríen por completo, mientras esperas, pica todas las hierbas y prepara el aderezo.
- Cuando las papas estén completamente frías, mezcle todos los ingredientes juntos y terminar espolvoreando el queso por encima.
Nutrition
Para esta receta intente utilizar papas con bajo contenido de almidón como las Red Bliss o papines, estas mantienen su forma muy bien después estar cocidas. Si no puedes encontrar estas trata con una que no tenga demasiado almidón como las Yukon Gold.

Gaila, I’ve seen a lot of recipes for potato salad, but this one is one of the most outstanding! I love the way you treated the potatoes as well as the addition of the smoked paprika, cilantro and cheese! In my book, cheese must be in any potato salad though:) One of the most delicious salads I’ve tried was potato salad mixed with ricotta, onion and just a few other components. It was so good!

Potato salad is one of my all time favorite summer side dishes, and this recipe definitely doesn’t skimp on the flavor! I love that you’ve lightened it up with Greek yogurt. I love me some Greek yogurt! 😀
