So Holiday season is upon us! amazing! time has flown by this year, I have experienced so many new things this year, is just amazing another new door opened and I just took the chance and go right trough it, am so glad I did.

This is my absolutely most favorite season of the year, the light is different, the aromas are sweeter and I love the autumn breeze. Is the season with the most amazing food as well, what can I say, every country have it’s own way of celebrating, different traditions different food, every family has it’s own recipe for the holidays.

Here we are big on eating rice, and for the holidays that doesn’t change much, the most traditional rice for the holidays is the “Moro de habichuelas negras” (Rice and black beans) but for many years now, this type of rice recipe have been on trend, and it doesn’t seem to be going away, most people call it “Arroz Navideño” (Christmas rice) or “Arroz fantasía” (Fantasy Rice). So here I share my family’s version of this holiday rice.

Cook Time: 35 minutes

Ingredients

  • 2 cups rice
  • 1 ½ cups broth
  • ½ cup cooking wine
  • 1 white onion diced
  • 1 sweet red pepper diced
  • 1 package of bacon sliced and cooked
  • 1 cup chives chopped
  • ½ cup raisins
  • 1 ripe plantain banana diced and fried
  • ¼ cup minced chives
  • ½ cup sliced almonds
  • 2 tablespoons olive oil
  • 2 tablespoons vegetable oil

Instructions

  • In a saucepan, add oil and cook the onion. Add the rice, stir well until all the rice is covered by a thin layer of oil, then add the wine and broth, cover well and get over low heat, simmer for 20 minutes.
  • In a separate pan, fry the red pepper squares and reserve. Then peel and cut the ripe plantain banana. Fry the plantains in a little hot oil and reserve. And then the same for the bacon.
  • After the rice is cooked in a big frying pan mix all the ingredients together. Mix well. Increase the heat and cook 3 to 5 minutes. Remove from heat and stir in almonds and some chives.

When you have this rice, in every bite you get rice, raisins, ripe plantain bananas, red bell pepper, chives and almonds, and is just crunchy, sweet, savory, comfort all the way! Every member of my family has a favorite part of this rice either the fried ripe plantain banana or the bacon, I mean that is not a hard choice either! 🙂 So I hope you enjoy this family recipe!
