Rustic potatoes hash

I love Saturdays, When you get up, you have the whole weekend before you, you have all day long for you and your plans, no driving the kids around, not going to work, in my case, at least, 🙂 normally I cook and take photos, so it’s always the same routine, make the grocery’s list and buy them on Thursday or Friday, prepare all elements I need for my recipes and on Saturday mornings cook and then take pictures.

Before I can begin with my Saturday day job! I need to fuel up, that is another reason for loving Saturdays, breakfast. I can make what ever I want and can eating while reading the paper or looking at my social medias! Yes, yes social media. 🙂

Rustic potatoes hash

Prep Time: 5 minutes
Cook Time: 15 minutes

Ingredients

  • 12 new potatoes halved
  • 2 ham slices cubed
  • 2 tablespoons chives
  • 2 eggs
  • 2 to matoes cubed
  • 1 tablespoon olive oil
  • Salt and fresh pepper

Instructions

  • In a cast iron pan, over medium heat, add the olive oil and the potatoes, let them cook for 8 - 10, then they will begin to be tender, add the ham, tomatoes salt and pepper. Cook for another 5 minutes, turn of the heat then add the chives.
  • In another frying pan, cook the eggs to your liking, mine was fried with a runny yolk.
  • Serve the potatoes and top with the eggs. Eat right away.

This is something  I have learned in the past year, try to make a posts schedule and even harder try to keep it. I think it is a balance between family life and posting schedule, cause my family eat all the food I cook for my blog, so I have to keep all em the members of my family when planning my posts. Sometimes, I make small recipes like today’s for example. When I saw the new potatoes or baby potatoes fresh from Constanza (valley on the center of the Dominican Republic) I just knew I had to buy them to make something hearty and rustic.  This is a very simple and great breakfast.DSC_0471


 Papas rusticas

Me encantan los sábados, cuando te levantas, tienes todo el fin de semana por delate para tí y todos tus planes, no hay que ir a trabajar, en mi caso, por lo menos; no hay que llevar a los niños a ningún sitio..normalmente 🙂 cocino y tomo fotos, así que es siempre la misma rutina, hago la lista de compras y voy  al supermercado el jueves o viernes, preparo los elementos que voy a necesitar para mis recetas y cocino sábados por la mañana y luego tomo las fotografías.

Antes de que pueda comenzar el sábado con mi trabajo del día! Tengo que alimentar la maquinaria, eso es otra razón para amar los sábados, el desayuno. Puedo hacer lo que quiera y puedo comer mientras leo el periódico tranquilamente o mirando a mis medios sociales! Si, si los medios de comunicación social. 🙂

Papas rusticas

Ingredients

  • 12 papines cortadas a la mitad
  • 2 rebanadas de jamón en cubos
  • 2 cucharadas de puerro
  • 2 huevos
  • 2 to mates cortados en cubos
  • 1 cucharada de aceite de oliva
  • Sal y pimienta fresca

Instructions

  • En una sartén de hierro fundido, a fuego medio, agregue el aceite de oliva y las papas , dejar cocer durante 8 a 10, en este momento las papas comenzarán a estar tiernas, añadir el jamón, el tomate sal y pimienta. Cocine por otros 5 minutos, apague el fuego, añada el puerro.
  • En otra sartén , cocine los huevos a su gusto, el mía lo hice frito con la yema líquida. Servir las papas y colocar el huevo sobre las papas.

DSC_0467Esto es algo que he aprendido el pasado año, tratar de hacer un calendario para mis publicaciones del blog y esforzarme más para mantenerlo. Creo que es un equilibrio entre la vida familiar y el calendario de publicaciones, porque mi familia a come toda la comida que cocino para mi blog, así que tengo que mantener a todos los miembros de mi familia en mente cuando preparo mi calendario de publicaciones. A veces, hago pequeñas recetas como la de hoy, por ejemplo. Cuando vi las papas nuevas o papines frescas de Constanza (valle en el centro de la República Dominicana) Yo sabía que tenía que comprarlas para hacer algo abundante y rústico. Este es un desayuno muy sencillo y genial.

  • What a fun recipe! You had me at Rustic Potatoes…as soon as I read that, I knew this would be right up my alley. And that egg on top! Hello, Saturday morning breakfast. 🙂 And I’m with ya on the post scheduling. We eat everything I make for the blog, too, and sometimes that means we’re making a savory dish that I won’t post for weeks just because we needed something for dinner. But it works out in the long run! Thanks for this fun idea!

    • David, you are too kind!! but I am with you all the way! sometimes I can feel my husbands eyes on my back while taking the pictures of the meal we are about to eat!! But they have been so patient with me I truly cannot complain! How is your wife and baby doing?
