21 Comfort soups & stews

tranquility (2)

Continuing with our anniversary week today I bring you an amazing round up of comforting soups ans stews that will provide comfort and a feeling of well-being, typically associated with childhood or home cooking. Nothing like something that your grandma used to made each time you had a flu or you use to make every time you had too much to drink.  To help me with this task, here are the recipes of dear fellow bloggers that I have met during this past year, some met specially for this post but I have followed them for some time now, not only are they great bloggers but they are my principal source of inspiration!

Here we find a classic french soup recipe with a twist from Mary Ann from The beach house kitchen so here you can taste her Caramelized onion soup, this soup is hearty, the caramelized onions are sweet and savory and help boost the flavor of any dish.

My version of black bean and chorizo soup, for this recipe I used Spanish Chorizo and not the Mexican version of chorizo. On this fall season, well all need a little more comfort when getting home from work. This soup is full of spices and yet mild enough even for the kids of the house! you can find the recipe here

Here is a Roasted Tomato and Mascarpone Soup with Grilled Cheese Croutons, great recipe from Rachelle from Beer girl cooks the freshness of the tomatoes with the creaminess from the Mascarpone cheese are a great combination and to top this off the crunchiness of the grilled cheese croutons, just delicious.

So this beautiful recipe from Gayle from Pumpkin and Spice, it’s Creamy Corn Chowder, it’s hearty, thick, and full of veggies. It’s definitely the perfect soup to warm up, as Gayle tells her self, when she was little she used to prefer broth-based soups, but now that she’s older  cream-based soups hold a special place in her heart, in our hearts as well.

I made this recipe on a super rainy day, I went to my cooking books shelf to look up for some inspiration, and then I found three different beef bourguignon recipes, including my mother in law’s recipe, which by the way turns out to be the best one I have tasted so far, mine never turns out to be that good, but it’s fairly decent. So I went the my pantry, my fridge and got  all the ingredients and so my journey into stew making began! You can find the recipe here

Here is a delicious soup made with a lot of love from Annie from Ciao chow bambina her Italian Sausage Soup with Sun-Dried Tomato & Oregano Tortellini is full of different textures and flavors, as Annie describes this soup “I love how the meaty flavor of the sausage enhances the tomato-flavored stock. In using both sweet and spicy Italian sausage, there’s a nice balance of flavor; which, at the end of the day, is what good soup is all about”. We totally agree with her and think this soup could bring  life to anyone that eats it.

This is a traditional Azteca soup or tortilla soup,  made with Chile Ancho or Chiles Guajillos or a susbtitute like 2 cubanelles (like in the DR we don’t find fresh Chile Ancho or Guajillos, so I use the fresh ones I found in my local market they are called Cubanelle peppers and they are closest to the Poblano peppers. You can find the recipe here.

Nothing says homemade more than a bowl of chicken & noodle soup, here in this recipe are so many childhood memories that without even noticing I am teaching my children nowadays at home. We use to have this soup and toasted bread for breakfast often (I know, I know I live in the Caribbean and here is always hot, that didn’t matter in my house) and whenever I was sick or had the flu or someone had the flu at the house we all got a bowl of this golden delicious broth with the veggies and noodles. This is what memories are built on! David from Spiced blog nailed this recipe of Homemade Chicken Noodle Soup to perfection.

As a kid I never liked lentils, didn’t like their texture and flavor, for me it was awful, much have change since apart the obvious, and I love lentils now, who would have thought? not me or my parents! I learn this Lentils with sausages recipe with my husband, this is a classic french dish, simple but super delicious, what I love the most about it is the mustard at the last moment, gives it a kick and kind of a surprised flavor! you can find the recipe here

Wonderful Moroccan spices and flavors you will be transported when trying this amazing recipe, my favorite since I tried it. The perfect ending to this fabulous round up, my Moroccan chicken with almonds and prunes. Moroccan tajine dishes are slow-cooked savory stews, typically made with sliced meat, poultry or fish together with vegetables or/ and fruit. Spices, nuts, and dried fruits are also used. Common spices include ginger, cumin, turmeric, cinnamon, and saffron. Paprika and chili are used in vegetable tajine. The sweet and sour combination is common in tajine dishes like lamb with dates and spices. You can find this recipe here
