Hachis Parmentier is a French dish made with mashed, baked potato, combined with diced meat, or if you will a simpler version of a shepherd’s pie. The word “hachis” means a dish in which the ingredients are chopped or minced.

This is a dish that will be normally made with leftovers, made with sausage meat,  veal, chicken, or beef. Today I bring you some minced veal and pork sausage recipe.

The trick I learned from Chantal, my mother-in-law is to saute each ingredient on its own and drain most of the liquid of after sauteeing.

Classic hachis Parmentier

Ingredients

  • 1 pound of leftover meat chopped on the food processor plus ground meat.
  • Two large sausages without the casing, chopped on the food processor.
  • 1 large onion
  • 2 shallots
  • 4 garlic cloves
  • salt
  • pepper
  • Mashed Potatoes:
  • 2 pounds of potatoes
  • 1 1/2 cup milk
  • 8 tablespoons butter
  • salt
  • pepper

Instructions

  • Peel, cut, and boil the potatoes for 15-20 minutes or until tender. Mash potatoes with some of the boiling water, adding butter, milk, salt, and pepper to taste. Set aside
  • Finely chop shallots, onion, and garlic. Sauté garlic, onion, shallots, and meats separate on the same pan. Discarding liquids each time, placing the sautéed ones on the bottom of the baking dish you are using.
  • To assemble the casserole, mix well all the meats, garlic, onion, and shallots until well combined, taste and rectify seasoning if needed. Spread all over the bottom of the dish.
  • Then layer mashed potatoes on top of the meats layer. Each layer should be about the same height. Heat oven to 200 C and cook uncovered for 30-35 minutes or until the top of the casserole is golden brown.
