Hello, hello! how was your weekend?? Mine was fine, a quiet weekend at home. Can you believe October is over ?? Happy Halloween by the way? lots of treats? or too much tricks? tired? beat? from all the trick or treating? I have the answer for that! These Pork sausage and rice filled zucchinis are super easy to make and delicious to eat! and will mend all your weekend long injuries.

I found these beautiful zucchini at the market the other day! and I just couldn’t leave them lying over there. So I picked a few of them (couldn’t take them all, sadly) and took them home with me!!

Ingredients

  • 4 medium round zucchinis
  • 3 tablespoons olive oil
  • 2 pork sausages
  • 1 small chorizo
  • 1 small onion chopped
  • 2 garlic cloves crushed
  • 1/2 cup cooked white rice
  • 1 small can crushed tomatoes
  • ½ tablespoon thyme leaves
  • ½ tablespoon parsley leaves chopped
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350 degrees (175 degrees C).
  • Cut the top off, to make a little sort of hat for them, with a spoon, scoop out the seeds. Chop and reserve about 3/4 of the seeds for the stuffing, paint the zucchini with olive oil and sprinkle some dry garlic and parsley, cook them in the oven for 20 minutes.
  • In the meantime, I took the sausages and chorizo, took their skin off and placed them on the food processor bowl along with garlic, onion and salt and pepper, crushed tomatoes, give this mixture a few pulses until made into a coarse mix.
  • In a medium bowl, mix together the ground sausage mix, rice and the reserved zucchini seeds, stir together, until well combined. Place the sausage rice mixture equally into all the zucchini. Place the filled zucchini in an oiled baking dish.
  • Bake in the preheated oven for approximately 30 minutes.

When I placed the zucchinis in the oven, I cover them with the little hat I had made previously, so my sausage mixture was well cooked but super moist, all the flavors were there. This dish is simple but very tasty. Today I did a sausage filling but these zucchinis can be filled with your favorites veggies, cheeses, bread crumbs, couscous, quinoa, the possibilities are endless!

  • Wow! I’ve never seen round zucchinis before! They are so cute! The presentation of these is just beautiful and the filling sounds delicious, but, then again, can’t go wrong with sausage and rice, can ya? We didn’t have as many trick or treaters as I thought we’d have. I think it was because of the little bit of rain, so we have LOTS of treats left, which is both a good and bad thing, lol 😀 I can’t believe it’s November either!! Where is the year going??     • I am with you Dawn I just don’t know where this year is going, apart from that, my week is going fine so far! These round zucchinis are not that hard to find but it’s true they are not as popular as the others. I am glad you like this rice and sausage combination, but if you keep reading you will find there is a twist in this recipe!! a hidden small chorizo into the ground sausage mix.!! ☺ two types of sausages in one simple recipe ? you really can’t beat that!

  • I’ve seen these round globe zucchini before, but I’ve never actually picked one up. I love the idea of using them as a “bowl” for that amazing sausage and rice stuffing. This sounds like the perfect meal for a chilly winter night…and it’s getting mighty chilly here at night now. I’m playing catch up as I was travelling last week, but man, this recipe needs to move right up to the top of my list of dinner ideas for the week! 🙂
