Ingredients

Caramelized Pineapple

  • 2 tablespoon butter
  • cup brown sugar
  • 1 vanilla pod seeds (or 1 teaspoon vanilla extract)
  • 1 pineapple cored and cut into 6 thick slices
  • Shortcut: canned pineapple rings work too drain well and pat dry

Pineapple Chips

  • 10 very thin pineapple rings about ¼ inch
  • ¼ cup sugar
  • ¾ cup water

Pineapple Creme

  • ½ cup pineapple juice
  • ½ cup shredded pineapple blended smooth
  • ¼ cup sugar
  • 3 egg yolks
  • 2 tablespoon cornstarch
  • 1 vanilla pod or 1 teaspoon vanilla extract
  • ½ cup whipping cream optional, for folding in at the end

Instructions

Pineapple Creme (make first so it can chill)

  • Bring pineapple juice + pineapple puree + vanilla to a gentle boil. Remove from heat.
  • Whisk sugar + egg yolks until pale and foamy. Whisk in cornstarch.
  • Temper: whisk in ⅓ of the hot pineapple mixture into the yolks.
  • Pour yolk mixture back into the saucepan. Cook over medium heat, whisking constantly, until thick and bubbling.
  • Remove from heat, cover (press plastic wrap to the surface if you want extra smooth), and chill until cold.
  • Optional: before serving, whip cream and fold into the chilled creme for a lighter mousse texture.

Pineapple Chips

  • Heat oven to 225°F (110°C).
  • Simmer sugar + water 2 minutes to dissolve.
  • Dip pineapple slices in syrup for 10 minutes.
  • Place slices on a silicone mat or parchment-lined tray.
  • Bake about 60 minutes until dried (time varies by thickness).
  • Transfer chips to a rack to cool.
  • Optional glossy finish (your original method):
  • Dip dried chips briefly into the caramel pan (from the pineapple slices), then return to the oven 15 minutes, cool on rack.

Caramelized Pineapple

  • Make a dry caramel: melt brown sugar in a pan over medium-high heat until amber.
  • Add vanilla seeds, then butter. Stir carefully.
  • Add thick pineapple slices and saute until glossy and caramel-coated.
  • Transfer slices to a rack to drain slightly.

  • Spoon pineapple creme onto the plate
  • Add 1 caramelized pineapple slice
  • Finish with 1–2 pineapple chips
  • Optional: mint leaves, lime zest, or toasted coconut
