The Sweetest Season Cookie Exchange is a yearly celebration of love—and by love, I mean cookies! During the holiday season, there’s nothing quite like sharing and spreading joy through the simple pleasure of baking. This year, some of my dearest blogger friends and I have teamed up to bring you a recipe that’s not only delicious but also fits perfectly into a low-carb lifestyle: Chocolate Almond Coconut Keto Cookies.
After all the holiday indulgences, my husband and I decided to kickstart the new year with a diet, and the keto diet was our choice. I had great results with it last year, so it was a no-brainer to return to it. These chocolate almond coconut keto cookies are a fantastic treat that doesn’t compromise on flavor. Made with almond flour, grated coconut, and garnished with 85% cocoa chocolate pieces, they are a perfect balance of sweetness and healthiness.
What is the Keto Diet?
If you’re new to the keto diet, it’s essentially a low-carb diet that teaches your body to use fat for energy. In keto, your body enters a state called ketosis, where it burns fat for fuel instead of carbohydrates. This diet is known by various names—ketogenic diet, low carb diet, low carb high fat (LCHF), etc. It’s all about reducing carb intake and increasing healthy fats.
Fun fact: this recipe was made by my husband! Yes, he bakes, and he did an amazing job with these cookies.
Why You’ll Love These Keto Cookies
These Chocolate Almond Coconut Keto Cookies are the ultimate low-carb indulgence. They’re crispy on the outside, soft on the inside, and packed with the goodness of almond flour, coconut, and dark chocolate. Plus, they’re sugar-free thanks to stevia, making them perfect for those following a keto or low-carb diet.

Instructions
Prepare the Dough
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Mix Dry Ingredients: In a large bowl, combine the almond meal, grated coconut, stevia, baking powder, and a pinch of salt. Stir well to ensure everything is evenly distributed.
- Add Wet Ingredients: Add the eggs, vanilla paste, and coconut oil (or melted butter) to the dry ingredients. Mix until the dough comes together.
- Incorporate the Chocolate: Fold in the chopped bittersweet chocolate, ensuring it’s evenly distributed throughout the dough.
Shape and Bake the Cookies
- Form the Cookies: Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet. Flatten each ball slightly with a fork; these cookies won’t spread much while baking.
- Bake: Place the baking sheet in the preheated oven and bake for 10-15 minutes, or until the cookies are golden brown and crispy around the edges.
- Cool and Serve: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy them with a cup of coffee or tea!

These look delicious. What a treat for folks on a keto diet. I have to bake a set and try them out. Will do over the weekend. Thanks for sharing!

I finally got around to baking them. What a treat! Unfortunately I can’t eat them for breakfast, lunch and dinner… 😉
I made these yesterday. They were perfect and this will be my go to chocolate chip cookie recipe from now on! I didn’t have chocolate chips, but I had a bar of Lily’s chocolate, so I just chopped them up. I also didn’t have a stick of butter, but I had ghee, so I used that too. I used a little bit less than half a cup.
I am glad you liked the cookies!! Did you tke any pictures I would love to take a look! Thanks for stopping by!
So I didn’t know much about the keto diet, although I’ve certainly heard about it. Thanks for the tips! We’ve been on a bit of a diet around here, too. It’s just so hard to get that extra holiday weight back off! And I’ve got one heck of a sweet tooth…so that makes it even harder. I’m thinking these cookies would be a good twist. Love the chocolate + almond + coconut combination! 🙂
