This Braised Belgian endive recipe is also known as Endives with ham, chicory gratin, endives au gratin, and endive roulades. Originally from Belgium and then popular in the north of France.
It’s funny how simple is to change a habit when you put your mind to it.
Before beginning the keto diet, I was most of the time craving something, it seems that is what sugar does to your body.
Braised Belgian endive
Ingredients
- 2 tablespoons unsalted butter
- 1 1/2 tablespoons salt
- 4 large yellow endives trimmed
- 4 slices of thick sliced ham
Bechamel sauce
- 2 tablespoons unsalted butter
- 1 1/2 to 2 tablespoons coconut flour
- 1 cup whole milk warmed
- 1 teaspoon freshly grated nutmeg
- 1/4 teaspoon freshly ground black pepper
- 8 ounces emmental or gruyère cheese shredded (1 2/3 cups)
Instructions
- In a large pot, bring water to a boil, then reduce the heat to maintain a steady simmer. Add the endive, cover, and cook until very tender, about 45 minutes. Take the endives out of the water, drain well and place over paper towels. Let the endives cool down and then, squeeze out as much liquid as possible from the endive.
- Preheat the oven to 200 °C (395°F).
- Roll each endive with slices of ham and then arrange in a baking dish.
- To make the béchamel, melt the butter in a small, heavy saucepan over medium heat add the flour and stir it quickly into the butter with a wooden spoon or a whisk, cook, whisking constantly, for about 2 minutes. Continue whisking and add the milk and bring the mixture to a boil. Continue whisking until thickened, about 5 minutes. Whisk in the nutmeg and pepper.
- Pour the béchamel over the endives and sprinkle the cheese evenly over the top. Bake until bubbly and golden brown on top, about 15 minutes.
- Serve and enjoy.

I thought I didn’t eat much sugar but then realized everything these days has some sugar in its contents somehow, even things that don’t really need it.
Besides losing some pounds and not having cravings, the best part is not being hungry, and I am super glad!
For today’s recipe, I used a veggie that I don’t use very often, endives and I do hope you try it because it was really tasty.
