As you may already know my thing is soup (if you didn't know, Yes I am a confessed soup junkie) but my husband is another history. His thing is pasta! and any pasta, but whole wheat pasta. If you, as him, love whole wheat pasta, you may already know that the best whole wheat pasta is either spaghetti or penne, so far in our opinion at least, the other presentations tasted like cardboard, have a weird texture or had no taste so ever. We have also tasted some gluten free pasta and so far our favorite is the rice noodles.

Ingredients

  • 1 box of your favorite whole wheat spaghetti or pasta
  • 2 cans of tuna in olive oil
  • 2 garlic cloves chopped
  • 20 grape tomatoes sliced in half
  • 2 tablespoons of capers
  • 2 tablespoons of parsley chopped
  • 2 tablespoons of chives chopped
  • 1 tablespoon of olive oil
  • 10 kalamata olives sliced into small pieces

Instructions

  • Open the canned tuna and drain the oil, keep one spoon full.
  • Boil some salted water on a pot, cook the pasta for 8 minutes for "al dente" pasta. When done, drain the liquid and add some butter or olive oil.
  • On a frying pan, add one tablespoon of the tuna oil and one tablespoon of olive oil. Add the garlic and the tomatoes cook for 3-5 minutes and then ad the tuna, olives, capers, chives and parsley.
  • Mix well and let cook for another 5 minutes.
  • Serve right away.

Whole wheat pasta cooks the same way as regular one. I put a large pot on the stove and filled (¾) almost all the way up, and some times besides salt I add some garlic cloves, pepper grains or red chilly pepper flakes, to give the pasta some flavor while it's cooking.

This recipe is simple and made with easy ingredients, if you prefer you to use fresh tuna, you can, just sauteed the tuna cubes along with the garlic and tomatoes, and follow the recipe as directed and you are good to go!
