Easy roasted chicken

Hey! Monday it’s here …and you have to begin thinking what are you going to make for dinner this week, what to do?? buy it or make it fresh from scratch, that is the question, most parents go through every week. I know most of us, live the routine and try to make the best of it, but why are we always so tired?
Some say is all the processed food we consume nowadays (It could be, when we were kids non of this stuff existed it was created to facilitate the lifestyle of our parents, and to a point I think it did, but what did we have to sacrifice in order to have fast food and pre-made or pre-cooked food?  Some say is the sedentary life style we live (Sedentary?? does that means I have to do more?) I think it just means We have to do things differently.
I think that our generation is realizing that we have to change the way we have been doing things so far, cause is not working for us or for our planet anymore. People are getting back to cooking from scratch, and there must be a good reason for it, right? I think so too.

 So we made this at least once a week I think, and we always use the leftovers for other recipes: soups, sandwiches, tacos, you name it, we have done it.

We always have a moist chicken just cook to perfection. I don’t know about your family, but in our family every piece of chicken have an owner, thighs are for my husband, legs and wings are for Charlotte, breast are for me and Cloé, this is like a understanding that is not written anywhere but is valid in all our family chicken meals!

This picture is a very important part of the meal itself. Is the beginning of the sauce. Deglace with stock, water, wine, let that simmer and reduce a little and then finish it with a spoonful of butter for shine and richness.

Prep Time: 15 minutes
Cook Time: 1 hour 15 minutes
Total Time: 1 hour 30 minutes

Ingredients

  • 1 whole chicken farm raised or organic
  • 2 tablespoons of dijon mustard
  • 2 tablespoons of butter room temperature
  • 2 tablespoons of olive oil
  • 1 tablespoons od fresh thyme leaves
  • 3 garlic crushed
  • 1 onion thinly sliced
  • 3 bay leaves
  • salt and pepper

Instructions

  • Pre-heat the oven at 415 F.
  • Mix all ingredients together but the chicken, until all ingredients are blend together.
  • Spread the seasons mixture all over the chicken. Put on a baking tray and roast for 75 minutes in the oven, verifying from time to time, and spooning over the chicken with the liquid.
  • When ready take out of the oven, take off the tray and cover with aluminium foil and let it rest.
  • Put the tray over a medium low fire, deglace with your favorite liquid: water, wine, stock, and let this reduce, taste it and season if necessary, add a tablespoon of butter to finish.
  • Serve with your favorite sides. Enjoy
