    Ingredients

    • 1 2 1/2- to 3 pound beef tenderloin
    • 2 tablespoons extra virgin olive oil
    • 1 big onion thinly sliced
    • 2 medium garlic cloves finely chopped
    • 1 tablespoon fresh thyme leaves finely chopped
    • 6 potatoes diced
    • salt & freshly ground black pepper

    Instructions

    • Heat the oven to 400°F and arrange a rack in the middle.
    • Using your hands, rub the tenderloin all over with the oil and garlic, sprinkle with the thyme leaves, salt and pepper, and rub until evenly coated; set aside.
    • Heat a large frying pan over medium-high heat until just starting to smoke. Place the beef in the pan and sear, turning occasionally, until golden brown all over, about 10 minutes.
    • In a baking dish, put a tablespoon of oil on the bottom, then add the onions then the potatoes, season well with salt and pepper.
    • Roast until an instant-read thermometer inserted into the thickest part of the beef registers 120°F to 125°F for rare or 125°F to 135°F for medium rare, about 20 to 30 minutes.
    • Transfer the beef to a cutting board and tent it loosely with foil. Let it rest at least 20 minutes before slicing.

You will buy a good quality local meat and veggies, like this you will help to develop your local community as well. If you freeze all your meat you can put it on the fridge from the night before then it will be ready to go when you come home from work. If you buy your meat fresh and do not freeze it, then you are good to go.

Follow the recipe, and add the veggies you love, or have at hand, I had potatoes, but carrots, mushrooms, sweet potatoes, broccoli, you name it most veggies will work great with this recipe.

I diced the potatoes into medium size cubes, sliced the onion thinly, chopped the fresh herbs, and keep some for garnishing just before serving, a dish looks better with fresh herbs garnish. Well, I know my family adores this dish, we serve it between medium and medium rare, you can cook it to your preference. I deglace the baking pan with some stock or just water, and and a piece of butter to make a little sauce.

 Este plato es un clásico por lo menos en mi casa, a mi esposo le encanta comerlo frío el día siguiente con mayonesa. Casi siempre hacemos este asado con papas o con una mezcla de guisantes tiernos y zanahorias solo salteados en mantequilla. Nada se compara con el dulzor de los vegetales tiernos.

Ingredients

  • 1 2 1/2 a 3 libras de lomo de res
  • 2 cucharadas de Aceite de oliva extra virgen
  • 1 cebolla grande cortada en rodajas finas
  • 2 dientes de ajo medianos machacado
  • 1 cucharada de hojas de tomillo fresco
  • 6 papas cortadas en cuadritos
  • sal y pimienta negra recién molida

Instructions

  • Calentar el horno a 400°F (200°C) y arreglar una parrilla en el centro.
  • Usando las manos, frotar el lomo por todas partes con el aceite y el ajo, espolvorear con la hojas de tomillo, sal y pimienta, y frotar hasta cubierto uniformemente; reservar.
  • Caliente una sartén grande a fuego medio-alto hasta que empiece a humear. Coloque la carne en la sartén y deje dorar, moviendo ocasionalmente, hasta que estén dorados por todos lados, unos 10 minutos.
  • En una bandeja de hornear, poner una cucharada de aceite en el fondo, luego, añadir la cebolla y las papas, sazonar bien con sal y pimienta.
  • Asar una carne de este tamaño por 20 minutos o hasta que un termómetro insertado en la parte más gruesa de la carne registre 120° F a 125°F (45°C a 50°C) para roja o 125°F a 135°F (55°C a 60°C) para a punto medio.
  • Transfiera la carne a una tabla de cortar y cubra sin apretar con papel de aluminio. Deje reposar al menos 20 minutos antes de cortarlo.

Yo tengo un problema serio con las sobras, no me gusta comer la misma cosa de seguido, pero claro en mi casa esta prohibido echar comida buena a la basura, eso es un crimen sabiendo que es un privilegio que no todo el mundo tiene. Entonces me veo en la disyuntiva de que hacer?? pues me he vuelto experta en reciclar sobras, siempre que veo emisiones o concursos culinarios en TV y tienen pruebas de este tipo  “darle una segunda vida a un plato ya hecho” estoy muy atenta!

A mi me encanta hacer sándwiches con esta carne fría y salsa tártara y lechuga, otra forma de reciclar las sobras es cortar o moler la carne  y utilizarla para el relleno de una tarta o de empanadas, o sofreírla con vegetales y hacer un salteado chino o un arroz frito! En fin ay miles de formas de darle uso a la comida en el refrigerador! todo antes que tener que desperdiciar un bien precioso.
