Ingredients for our Triple Chocolate Gluten-Free Cookies:

Gluten-Free All-Purpose Flour

Gluten-free flour is suitable for individuals with gluten sensitivities or celiac disease. It allows those with dietary restrictions to enjoy baked goods without discomfort.

Ensure that the gluten-free flour mix you use is well-balanced and appropriate for baking. Some blends may require additional binding agents like xanthan gum.

Unsweetened Cocoa Powder:

Unsweetened cocoa powder is rich in antioxidants and may have health benefits, such as improving heart health and reducing inflammation.

Choose high-quality, unsweetened cocoa powder to enhance the chocolate flavor in your cookies. It’s important not to confuse it with sweetened cocoa mixes.

Almond Flour:

Almond flour is a gluten-free, nutrient-dense option that adds healthy fats, protein, and a subtle nutty flavor to your cookies.

Store almond flour in the refrigerator or freezer to maintain its freshness. It tends to spoil more quickly than wheat flour.

Tapioca Flour:

Tapioca flour can add a pleasant chewiness to gluten-free baked goods and acts as a thickening agent. It’s naturally gluten-free.

Use tapioca flour in combination with other gluten-free flour for best results. It can help improve the texture of gluten-free recipes.

Baking Powder:

Baking powder is a leavening agent that helps your cookies rise and become light and fluffy.

Check the expiration date on your baking powder to ensure it’s active. Too much or too little can affect the texture of your cookies.

Baking Soda :

Baking soda also helps with leavening and contributes to the cookies’ tenderness.

Baking soda requires an acid to activate it properly. In this recipe, the brown sugar and cocoa powder provide the necessary acidity.

Salt:

Salt enhances the flavor of your cookies and helps balance the sweetness.

Use the recommended amount of salt, as it can significantly affect the taste. Sea salt or kosher salt can add a nice texture and flavor.

Unsalted Butter, Softened:

Butter adds moisture, flavor, and a tender texture to the cookies. Soften the butter at room temperature for best results. Creaming it with sugars helps create a light and fluffy cookie texture.

Granulated Sugar and Brown Sugar:

Dark Chocolate Chips, White Chocolate Chips, and Semi-Sweet Chocolate Chunks:

These mouthwatering cookies are perfect for holiday gatherings

Ingredients

For the dry ingredients:

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup almond flour
  • 1/4 cup tapioca flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the wet ingredients:

  • 1/2 cup unsalted butter softened (or dairy-free butter for a vegan option)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar or coconut sugar for a healthier option
  • 1 large egg or flax egg for a vegan option – 1 tablespoon ground flaxseed mixed with 3 tablespoons water
  • 1 teaspoon pure vanilla extract

For the mix-ins:

  • 1/2 cup dark chocolate chips choose gluten-free
  • 1/2 cup white chocolate chips choose gluten-free
  • 1/2 cup semi-sweet chocolate chunks choose gluten-free

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium-sized mixing bowl, whisk together the dry ingredients: gluten-free all-purpose flour, cocoa powder, almond flour, tapioca flour, baking powder, baking soda, and salt.
  • In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg (or flax egg) and vanilla extract to the wet ingredients, and mix until well combined.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing until a soft cookie dough forms.
  • Gently fold in the three types of chocolate chips: dark, white, and semi-sweet. This will create a delightful triple chocolate experience.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
  • Bake in the preheated oven for 10-12 minutes or until the edges are set, but the centers are still soft.
  • Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely.
