Last year for our summer vacations, we flew from New york to Las Vegas and then drive all the way to Phoenix, visiting of course the Grand Canyon, Antelope Canyon, Horseshoe Bend! amazing nature.
In Las Vegas we stayed at the Aria Hotel, we got to taste several cuisines and I loved this recipe. Pork tenderloin braised in a spicy tomatillo and chiles sauce, each bite was an explosion of flavors.
First the pork is sautéed with onions with some green chiles and color all sides, deglazed the pot with stock or water, then add the tomatillos and jalapeños and braise in the oven at a very low heat.

Oh my gosh…this sounds like an incredible meal! That pork tenderloin looks like it is bursting with flavor! We don’t live very close to Vegas, so it looks like I’ll just need to recreate this one at home…thanks for sharing!
