This Pulled pork and fresh tomatillos soup comforted me when I needed most, and here I will tell you how and why.
Summer es halfway through, 🙁 Our road trip was a complete success, OMG, so many places, so much to see, We got to see so many beautiful places, amazed at how wonderful and fantastically gorgeous the west coast is.
You can see some of my trip to the west coast on this Pinterest board . But everything comes to an end, sadly good things go by so fast you have just enough time to realize how good they were.
So, here is my back to (almost) reality – venting session. I didn’t went home with my husband and kids, I took a detour from the Dominican Republic to Salt Lake City, Utah, a while ago my father was diagnosed with prostate cancer and he is getting his surgery tomorrow at noon.
He was lucky enough to find out on his yearly general check-up, He lives a very healthy lifestyle, works out every weekday, good enough diet, so expectations are high.
Even though it has come as a shock to all of us, and tension have sprung among us, we are hoping for the best and intend to be back home with him in about two weeks.
Fresh Tomatillos – The Petit Gourmet
Pulled pork and tomatillos soup
Ingredients
- 2 pounds of fresh tomatillos cut into medium – small pieces
- 4 garlic cloves crushed
- 1 onion cut into cubes
- 1 green pepper cut into cubes
- 4 cups of stock your favorite for this recipe I used vegetable stock
- 1 pound of pork shoulder, loin cut into medium pieces
- 2 green onions cut into pieces
- 1 bunch on fresh cilantro
- salt and fresh black pepper
Possible garnishes
- Crema fresca or sour cream
- Chicharron cut into small pieces
- avocado cut into small cubes
- lime
- tortilla chips
- pita chips
- jalapenos
- diced tomatoes
Instructions
- Put all the ingredients on the crock pot, and leave to simmer for eight hours on medium, then take the pork out and shred the meat, and if there is still some tomatillos pieces, you can mix the a little or if you prefer to have pieces you can let them!
- Enjoy.
I’ve never needed more to cook than now, it has been my therapy all along and just makes me feel useful, anyhow, spending some time in the hospital it hasn’t been very easy.
I have become a closer relationship with the crockpot, it’s just great to buy my ingredients and put them all together in the morning and return in the afternoon and found first a great smelling house and second a warm and comforting meal to eat.
So here is the first of several crock pot recipes, I just ask you to bear with me for the following next weeks, and if you have faith (any kind of is good enough) ask for my father’s health reestablishment, thank you so much for reading and being with me.
