So I am back home from Utah, my father is doing great, the last test results are great news for us, as they came out negative! Yay! So this is a recipe I trhew together with veggies I had in my fridge and a salmon filet, but you can eat this alone.

Ingredients

For the Quinoa

  • 1 cup dry quinoa
  • 1 teaspoon salt
  • 2 cups of water

The veggies

  • 1 bunch of fresh green asparagus
  • 1/3 cup finely diced red onion
  • 1 cup tomatoes diced
  • 1/2 cup kalamata olives diced
  • 2 tablespoons fresh parsley thinly sliced
  • 1/2 cup feta cheese crumbled

For the Vinaigrette

  • 6 tablespoons extra virgin olive oil
  • 3 tablespoons sherry vinegar
  • 2 garlic cloves crushed
  • Salt and pepper

Instructions

  • Bring 2 cups of water, the quinoa and salt to a boil (follow the quinoa box instructions). Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 15 to 20 minutes. Remove from heat and set aside to cool.
  • Cut the asparagus in half. Heat the grill or oven, season your asparagus with olive oil and salt and cook until tender, but still crunchy, about 15 minutes.
  • Prepare your vinaigrette (olive oil, vinegar, garlic, salt and pepper), dice your veggies and toss together in a large bowl until well combined. Sprinkle with the crumbled feta cheese and olives.

Perhaps the most amazing health benefit provided by quinoa is its overall nutrient richness  and its protein content. The only special handling required with quinoa is to give it a good rinse before cooking; otherwise, the grains can be bitter.

 Apart the obvious this salad is filled with lots of different flavors and textures, great for any light lunch or dinner. A good gluten-free source of protein, iron, and fiber, quinoa is a quick and flavorful way to get in a serving of whole grains. About the size of pellets of couscous, quinoa cooks in about 20 minutes.

Así que estoy de vuelta a casa desde Utah, mi padre está muy bien, los últimos resultados de las biopsias son una gran noticia para nosotros, ya que salieron negativos! Sí! Así que esta es una receta que hice con verduras que tenía en mi nevera y un filete de salmón, pero se puede comer como un plato solo.

Aparte de lo obvio esta ensalada está llena de un montón de diferentes sabores y texturas, ideal para cualquier comida  o cena ligera. Una buena fuente de proteína, hierro y fibra, libre de gluten la quinoa es una manera rápida y sabrosa de obtener una porción de granos enteros. Es como del tamaño de granitos de cuscús, la quinoa está lista en unos 20 minutos. El único tratamiento especial requerido  para la quinoa es darle un buen enjuague antes de cocinar; de lo contrario, los granos pueden ser amargos. Tal vez el beneficio para la salud más increíble proporcionado por la quinoa es su riqueza global de nutrientes y su contenido de proteínas.

Ingredients

Para la quinoa

  • 1 taza de quinoa seca
  • 1 cucharadita de sal
  • 2 tazas de agua

Las verduras

  • 1 manojo de espárragos verdes frescos
  • 1/3 de taza de cebolla roja finamente picada
  • 1 taza de tomates cortados en cubitos
  • 1/2 taza de aceitunas Kalamata cortadas en cubitos
  • 2 cucharadas de perejil fresco cortado finamente
  • 1/2 taza de queso feta desmenuzado

Para la vinagreta

  • 6 cucharadas aceite de oliva virgen extra de 6 cucharadas
  • 3 cucharadas de vinagre de jerez
  • 2 dientes de ajo machacados
  • Sal y pimienta

Instructions

  • Lleve las 2 tazas de agua, la quinoa y la sal a ebullición (siga las instrucciones de la caja quinoa). Reduzca el fuego a medio-bajo, tape y cocine a fuego lento hasta que la quinoa esté tierna, aproximadamente 15 a 20 minutos. Retire del fuego y deje enfriar.
  • Cortar los espárragos por la mitad. Calentar la parrilla o el horno, sazonar los espárragos con aceite de oliva y sal y cocinar hasta que estén tiernos, pero todavía crujientes, unos 15 minutos.
  • Prepara tu vinagreta (aceite de oliva, vinagre, ajo, sal y pimienta), corta tus vegetales y mezcle en un tazón grande hasta que estén bien combinados. Espolvorear con el queso feta y aceitunas.
