This creamy polenta  with roasted tomatoes is just so comforting!! so creamy! I found fresh basil at the market and whipped a jar of fresh pesto, then things got just perfect for a bowl of creamy polenta to go with this amazing fresh pesto! for the finishing touch I roasted some delicious cherry tomatoes and I was set. There’s nothing more comforting than a great bowl of steaming hot polenta, I am sure I have told you this before! hehehe

I think often to pair polenta with veggies only,  I think it has to be because of the polenta texture, is just like a blank canvas waiting to be painted, and I often find myself choosing veggies over meat to pair with polenta, my favorite pairing so far are, roasted tomatoes, mushroom ragu or roasted mushrooms and remember the time I paired my polenta with Moroccan style veggies ? I think that veggies help to improve the overall texture experience of the dish!

Ingredients

  • For the polenta:
  • 2 cups whole milk
  • 2 cups water
  • teaspoons salt
  • 1 cup polenta or yellow cornmeal
  • 4 tablespoons unsalted butter
  • ¼ cup mozzarella cheese shredded
  • ¼ cup Parmesan cheese shredded
  • 1 Cherry tomatoes package roasted for 45 minutes on a 350F oven.
  • Salt and pepper to taste
  • For the pesto
  • 3 bunches of fresh basil leaves
  • 3 garlic cloves
  • salt and pepper
  • 1/4 cup toasted pine nuts
  • 1 to 1 1/2 cups of olive oil

Instructions

  • For the polenta:
  • In a large pot over medium-high heat, bring milk, water, and salt to a boil. Gradually whisk in polenta. Reduce heat to low, and cover. Cook 20 minutes, until creamy, lifting the lid and stirring every 3 or 4 minutes to prevent sticking. Remove pot from stove, stir in pepper and butter. Gradually stir in cheese.
  • For the pesto:
  • Wash thoroughly the basil leaves and in a blender, add the leaves, the garlic cloves, salt and pepper to taste, and pine nuts, begin blending and begin adding slowly but constantly the olive oil. I keep in a jar refrigerated for up to 1 month.
  • For the tomatoes:
  • Pre heat the oven at 350F.
  • In a baking dish, place the tomatoes, sprinkle with a splash of olive oil and season with salt and pepper, cook for 35 to 45 minutes.
  • Serve the polenta in bowls and then top with the tomatoes and some pesto.

Esta polenta cremosa con tomates asados es tan reconfortante!! tan cremosa! Me encontré con albahaca fresca en el mercado y cuando llegué a casa preparé un frasco de pesto fresco, y después las cosas se alinearon perfectamente para preparar un plato de polenta cremosa para acompañar este increíble pesto fresco! para darle el toque final asé unos deliciosos tomates cherry y estaba listo! No hay nada más reconfortante que un gran plato de polenta cremosa caliente, estoy segura de que les he dicho esto antes! jejeje

A menudo pienso acompañar la polenta con vegetales únicamente, creo que tiene que ser debido a la textura de polenta, es como un lienzo en blanco esperando a ser pintado, y muchas veces me encuentro eligiendo vegetales en vez de carne para servir con la polenta, mis acompañantes favoritos hasta ahora son, tomates asados, ragú de hongos o champiñones asados y ¿ recuerdan el día que serví la polenta con unos vegetales al estilo Marroquí ? Creo que los vegetales ayudan a mejorar la experiencia general de la textura del plato!

  • Para la polenta:
  • 2 tazas de leche entera
  • 2 tazas de agua
  • 1 ½ cucharaditas sal
  • 1 taza de polenta o harina de maíz amarillo
  • 4 cucharadas de mantequilla sin sal
  • ¼ de taza de queso mozzarella rallado
  • ¼ de taza de queso parmesano rallado
  • 1 paquete de tomates cherry asados durante 45 minutos en un horno a 350 ° F.
  • Sal y pimienta al gusto
  • Para el pesto
  • 3 racimos de hojas de albahaca fresca
  • 3 dientes de ajo
  • sal y pimienta
  • 1/4 taza de piñones tostados
  • 1 a 1 1/2 tazas de aceite de oliva

Instructions

  • Para la polenta:
  • En una olla grande a fuego medio-alto, ponga la leche, el agua y la sal hasta que hierva. Incorporar gradualmente la polenta. Reduzca el fuego a bajo, y cubra. Cocine 20 minutos, hasta obtener una crema, levantar la tapa y agitar cada 3 o 4 minutos para evitar que se pegue. Retire la olla de la estufa, agregue la pimienta y la mantequilla. Poco a poco agregar el queso.
  • Para el pesto:
  • Lave bien las hojas de albahaca y en una licuadora, agregue las hojas, los dientes de ajo, sal y pimienta al gusto, y piñones, comience a batir y comience a agregar lenta pero constantemente el aceite de oliva. Yo guardo este pesto en un frasco de vidrio en la nevera hasta por un mes.
  • Para los tomates:
  • Precaliente el horno a 350F.
  • En una fuente para horno, colocar los tomates, espolvorear con un poco de aceite de oliva y sazonar con sal y pimienta, cocinar por 35 a 45 minutos.
  • Servir la polenta en cuencos y luego cubra con los tomates y un poco de pesto.

  • You know what’s funny? We’ve had polenta one night this week already, and we’re planning on making it again tonight. I love how creamy and comforting it is. And those roasted tomatoes on top? I need to hit the store and grab some tomatoes to toss onto the polenta tonight! Looks delicious!
