Hey!! y’all it’s Friday! (happy dance) this is my favorite season to entertain, Love the weather, the ambiance, people spirits in general improve during this season, agendas are packed with cocktails, get together’s, potlucks, dinners, and lots of casual reunions with friends and family for no reason whatsoever!

Each and every time, asking your self what to prepare, what to serve, today I bring you some easy options that you can put together rather quickly and people tend to love. Finger food! Nowadays you can find on groceries stores and supermarkets different serving trays and mini cups, that will allow you to serve a mini buffet with finger food!

I am using one of my family’s favorite ingredient, Avocado, I found that pairing avocado with spices and other ingredients, make this ingredient the star of any meal!

Holiday finger food

We are preparing 3 different finger food with these ingredients. 1. Salmon, avocado mousse, salmon roe and chives 2. Pico de gallo topped with avocado cubes and pita chips 3. Avocado mousse and shrimp

Ingredients

  • 4 medium avocados Haas or 2 big avocados
  • 1 pico de gallo recipe click here
  • 1 pita bread package
  • 1/2 teaspoon of smoke paprika or Espelette pepper
  • 16 shrimps boiled
  • 1 tablespoon of fresh parsley
  • 1 smoked salmon package
  • 2 oz jar of Salmon Roe optional
  • 1/4 teaspoon of cumin
  • 1/2 cup of mascarpone cheese
  • 2 tablespoons of sliced chives
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  • Mix in a food processor half of the avocados with salt, pepper, mascarpone cheese and olive oil, then separate in two. For the first half add the Espelette pepper and parsley, mix until well combined then serve with the shrimp, I used a pipping bag to make it prettier. For the second half add the cumin, serve with the smoked salmon, chives and salmon roe.
  • Cut in half the pita breads, then in 6 slices, put on a baking dish, sprinkle with some olive oil and smoked paprika. Toast until golden in a 350F oven.
  • Serve together the pico de gallo topped with the other half of the avocados that you have cut into small cubes, drizzle with olive oil.
  • Enjoy!

 Trio de canapés de aguacate

¡¡Hey, Hey, Hey!! Hoy es viernes! (yupi) esta es mi estación del año favorita, me encanta el clima, el ambiente, el espíritu de la gente  en general mejora durante esta temporada, Las agendas están llenas de cócteles, reuniones, comidas, cenas, y un montón de reuniones casuales con amigos y familiares por ninguna razón en absoluto!

Cada una de las veces pensando en qué preparar, qué servir, hoy les traigo algunas opciones fáciles que ustedes pueden preparar con bastante rapidez y la gente tiende a amar. ¡Picaderas o canapés! Hoy en día se pueden encontrar en tiendas de comestibles  y supermercados diferentes bandejas y mini tazas, así podrán servir más fácilmente un  mini buffet de ¡picaderas o canapés!

Estoy usando uno de los ingredientes favorito de mi familia, Aguacate, encuentro que emparejar el aguacate con especias y otros ingredientes, hacen que este ingrediente sea la estrella de cualquier comida!

Estamos preparando 3 canapés diferentes con estos ingredientes. 1. Mousse de aguacate, salmón ahumado, huevas de salmón y puerro 2. Pico de gallo cubierto con cubitos de aguacate y chips de pita 3. Mousse de aguacate y camarones

Ingredients

  • 4 aguacates medianos Haas o 2 grandes aguacates
  • 1 receta de pico de gallo haga clic aquí
  • 2 Paquetes de pan pita
  • 1/2 cucharadita de pimentón ahumado
  • 1/2 cucharadita de pimiento de Espelette
  • 16 camarones cocidos
  • 1 cucharada de perejil fresco
  • 1 paquete de salmón ahumado
  • 2 oz frasco de huevas de salmón opcional
  • 1/4 cucharadita de comino
  • 1/2 taza de queso mascarpone
  • 2 cucharadas de puerro en rodajas
  • 2 cucharadas de aceite de oliva
  • Sal y pimienta al gusto

Instructions

  • Mezclar la mitad de los aguacates en un procesador de alimentos con sal, pimienta , queso mascarpone y aceite de oliva, luego separar en dos. Para la primera mitad añadir el pimiento de Espelette y perejil, mezclar hasta que esté bien combinado luego servir con los camarones , utilicé una bolsa con bocilla para hacer el mousse de aguacate más atractivo. Para la segunda mitad añadir el comino, servir con el salmón ahumado, puerro y huevas de salmón .
  • Cortar a la mitad los panes de pita , luego en 6 rebanadas , poner en una fuente para horno, espolvorear con un poco de aceite de oliva y pimentón ahumado. Cocer hasta que estén dorados en un horno a 350 ° F.
  • Servir junto al pico de gallo con la otra mitad de los aguacates que ya haya cortado en cubos pequeños , rociar con aceite de oliva.

    These are prefect for the holiday season! Delicious and beautiful to look at too. I eat smoked salmon and diced avocado together all the time but never thought about pairing the salmon with a more elegant avocado mousse. I’m going to try these as Thanksgiving apps this year 🙂
