Baked Grated Coconut dessert
Ok, so the country I was born in, the Dominican Republic is just like a giant cooking pot! a blend of cultures! the result of countless immigrates from Europe and Africa and the original natives, The Taíno. European, African and Taíno cultural elements are most prominent in food, you can find traces of all three cultures in our gastronomy, that has been keep over the years, generations to generations. One of our most loved local produce “Coconut” is feature in this recipe.
We are a big producer of coconuts, and here you can find several different produces made from coconut: bread, new coconut dessert, Jalao (grated coconut and molasses dessert), Conconetes (coconut cookies), savory coconut rice and beans, savory coconut fish.. Baked grated coconut cake
Ingredients
- 3 cups shredded coconut
- 1 1/2 cups of sugar
- 1/2 cup evaporated milk
- 1 1/2 cup of coconut milk
- 1/2 cup all purpose flour
- 1/4 of cinnamon or a small stick of cinnamon
- 2 egg yolks lightly beaten
- Zest from 2 limes
- 3 tablespoons melted butter
- Pinch of salt
Instructions
- Pre heat the oven at 375 F.
- Grate the coconut.
- Mix everything very well and put in greased baking mold bake it for 35 - 45 minutes (or until a stick comes out clean).

This is where I found the most delicoous coconut dessert ..from my taste I can tell it contained coconut , milk sugar but to my suprise realised this was baked in a dish..soo deliciousssss..

can i substitute the coconut milk with buttermilk or simple milk to give it moistness? i know that it will change the taste, but will it change the texture?
