In summer is so normal to grill almost every day, the weather is so beautiful, you just have to profit from it. Most of the time salads or roasted veggies are the safest bet to take, and this one is an old classic but always fun to prepare and so comforting to eat.

The fact that these potatoes are bake or roasted not boiled I think it adds a layer of flavor, and I prefer to make this salad this way. I like to leave the skin on, I think it adds some texture to the potatoes and also you have the impression of eating loaded potatoes skins, a family favorite.

Loaded potatoes salad

Cook Time: 45 minutes

Ingredients

  • 4 pounds russet potatoes cut into bite size pieces
  • 2 tablespoons of olive oil
  • 3 tablespoons apple cider vinegar
  • ½ cup of low fat mayonnaise
  • ½ cup of low fat cream cheese
  • ¼ cup of low fat sour cream
  • 1 teaspoon salt and freshly ground black pepper
  • 1 pound bacon cooked and chopped
  • ½ bunch of chives chopped
  • 1 cup medium cheddar cheese shredded

Instructions

  • Preheat oven to 400 degrees F.
  • Mix the mayonnaise, vinegar, cream cheese and sour cream in a bowl and season with salt and pepper. Reserve
  • Place the potatoes on a baking sheet. Lightly coat with olive oil, season well with salt and pepper and cook for 45 minutes.
  • Mean while cook the bacon in a large skillet, drain and let cool. Cut into bite-size pieces and reserve. Chop the green onions and reserve.
  • When the potatoes are cooked take out of the oven and let them cool down a little and then add the dressing to the potatoes, stir in the green onion, cheddar cheese and season with more salt and pepper to taste. Top with the bacon. This could be serve warm, but everybody seems to preferred this salad cold from the fridge. Enjoy with your favorite BBQ.

En verano es tan normal cocinar en la parrilla casi todos los días, el tiempo es tan hermoso, hay que aprovecharlo. La mayoría del tiempo, las ensaladas o verduras asadas son la apuesta más segura para cocinar, y ésta es una receta clásica pero siempre divertida para preparar y tan reconfortante para comer.

El hecho de que estas papas sean horneadas o asadas y no hervdas, me encanta, yo creo que añade una capa de sabor, y prefiero hacer esta ensalada de esta manera. Me gusta dejar la piel, creo que añade un poco de textura a las papas y también tienes la impresión de comer pieles papas asadas y sazonadas, un favorito de la familia.

Ensalada de papas asadas

Ingredients

  • 4 libras de papas rojas o russet cortadas en trozos pequeños
  • 2 cucharadas de aceite de oliva
  • 3 cucharadas de vinagre de sidra de manzana
  • ½ taza de mayonesa baja en grasa
  • ½ taza de queso crema bajo en grasa
  • ¼ taza de crema agria baja en grasa
  • 1 cucharadita de sal y pimienta recién molida
  • 1 libra de tocineta cocida y picada
  • ½ paquete de puerro picado
  • 1 taza de queso cheddar rallado

Instructions

  • Precaliente horno a 400 grados F.
  • Mezcle la mayonesa, el vinagre, el queso crema y la crema agria en un bol y sazonar con sal y pimienta. Reservar
  • Coloque las papas en una bandeja para hornear. Cubrir ligeramente con aceite de oliva, sazonar bien con sal y pimienta y cocine por 45 minutos.
  • Mientras tanto cocinar el tocino en una sartén grande, escurrir y dejar enfriar. Cortar en trozos pequeños y reservar. Picar el puerro y reservar.
  • Cuando las papas estén cocidas sacarlas del horno y dejar enfriar un poco y luego añadir el aderezo a las papas, añada el puerro, el queso cheddar y sazone con sal y pimienta de ser necesario. Añada encima la tocineta. Esta ensalada se podría servir caliente, pero todo el mundo parece preferirla fría de la nevera. Disfrute con su parrillada favorita.
