Colombian changua

What are some of your favorite Latin breakfast recipes that power your morning? Well breakfast at my parent’s house was a big thing and for specially, I couldn’t then and still can’t now leave the house without breakfast, this meal is supposed to maintain your body working up until lunch. Latin breakfast are really special, and I could mention a few that are on my all time favorite list: Number one by far is Mangú de plátanos con queso y salami frito (Mashed green plantains with fried salami and cheese) from Dominican Republic, number two would be without any doubt Chilaquiles (tortillas and sauce with fried egg on top) from Mexico, number three would be sopa boba o sopita (AKA chicken noodle soup but upgraded!) Several countries served this delicious soup including the Dominican Republic, number four is gallo pinto from Costa Rica (white rice mixed with red beans, cheese, tortillas and fried eggs), number five is arepas (Several countries served this as breakfast) and last but not least is the Changua from Colombia (poached eggs in a milk based broth with lots of cilantro and chives). Milk is one of the most affordable sources of high-quality protein you can find. From muscles to hair, bones to teeth, the body needs protein to be strong and healthy.
This is a typical Colombian recipe from the Andes region and it’s nutritious, easy and quick to make, so when I am short on time, this is one of my favorite way to enjoy a milk-based breakfast, drinking milk and its high-quality protein alongside your eggs or with your favorite overnight oats combo it’s a smart way to start the day with energy and focus. Getting enough protein at breakfast can help you stay fuller longer so you’re more likely to stick to your healthy eating routine. With 8 grams of high-quality protein in every 8 ounces, milk is an easy, simple and delicious way to add protein to your morning meal. Colombian changua
Ingredients
- 2 cups water
- 2 cups milk
- 4 eggs
- 2 tablespoons fresh cilantro chopped
- 2 tablespoons fresh chives chopped
- salt to taste
- 4 slices rustic toasted mix-grain bread cut into cubes
Instructions
- Chop the scallions and cilantro into small pieces. In a stockpot add the water, coriander, chives, milk and salt. When the soup boils, make a whirlpool with the help of a spoon and then crack the eggs and add them carefully to the soup without breaking the yolk. Let the soup boil for two minutes.
- Spoon out the eggs, then add some broth. Serve the soup with bread.

Not only this is a super simple and fast recipe to make but also a really easy way of powering up your mornings with a protein-rich breakfast including milk. This can help energize your morning. You’ll feel fuller longer so you can focus on the things you want to accomplish. Now that’s a good start. This dish can be eaten at any moment of the day really, in Colombia it is known as cure for hangovers! 🙂 I paired my Changua with my café con leche and I was ready to face my day routine full of energy.

I’ve never had a Latin breakfast, Gaila (all the things I’ve tried were the desserts – there are some fantastic sweet recipes!) Honestly, I barely can imagine the mixture of milk and herbs, but this sounds intriguing anyway!

I must admit that I’ve never of changua before…but it sounds amazing! I bet it’s super creamy…oh, and I’m a big fan of cilantro. I know this one would be a hit in our house. I’ll have to add it to the list of delicious breakfasts to try! 🙂

Heartily delicious filling breakfast
As a kids we i always asked my mom to make “Colombian egg drop soup” that we loved so much. This is hearty and filling and always calls for a nap afterwards ? My mom made it with yellow onions as well as the green, for a more oniony flavor to permeate the milk broth.
