Pineapple is a lovely fruit that’s flavors remind us of bright summer days and warm breezes, pineapple has become a trend for many.
When we think of pineapple, we think mostly about pina colada or grated into a carrot cake batter or upside-down cake.
Today I am going to show you to make a luscious decadent dessert that will surprise your guests, only using pineapple. It has three components: Caramelized pineapple, pineapple crème and pineapple chip.
Make a dry caramel with the sugar over a high flame. Then add the grated vanilla seeds, stir and then add the butter. Put 1 pineapple in large quarters and sauté in this caramel.
Thin slices of pineapple. Line baking sheet place pineapple slices and bake until dry, about 1 hour.
Remove the chips from the oven and place them in the caramel (use to cook the large pineapple slices) then put them again in the oven and cook for 15 minutes.
Then simply place over a rack and let cool to room temperature until needed.
When the pineapple slices are cook in this caramel put them in a cooling rack, this way they will drain some of the caramel.
Decadent Pineapple Delight
Ingredients
- For the caramelized pineapple slices
- 2 tablespoons of butter
- 1/3 cup brown sugar
- 1 pineapple cored and cut into 6 slices (canned pineapple rings)
- 1 vanilla pod seeds
- For the pineapple chips
- 6 – 12 Thin slices of pineapple very sweet pineapple peeled, trimmed, and sliced into 1/4" rings on a mandolin or electric slicer
- ¼ cup of sugar
- ¾ cup of water
- For the pineapple crème
- ½ cup pineapple juice
- ½ cup shredded pineapple mix on a blender until smooth
- ½ cup of whipping cream Optional
- 1 vanilla pod or 1 teaspoon vanilla extract
- 1/4 cup sugar
- 3 egg yolks
- 2 tablespoons of corn starch
Instructions
- For the caramelized pineapple slices
- Make a dry caramel with the sugar over a high flame. Then add the grated vanilla seeds, stir and then add the butter.
- Put 1 pineapple in large quarters and sauté in this caramel.
- When the pineapple slices are cook in this caramel put them in a cooling rack, this way they will drain some of the caramel.
- Serve the pineapple with the pineapple crème and chip. Ideas for plating:
- Spoon the pineapple crème on the bottom of the plate place one caramelized pineapple sliced and one or two pineapple chips depending on their sizes. Garnish with some mint leaves. Serve the remaining pineapple crème on the side.
- For the pineapple chips
- Heat oven to 225°F.
- Remove center core from each pineapple slice with small cookie cutter.
- Put the thin slices of pineapple in a syrup consisting of sugar and water. For about 10 minutes.
- Place on a baking dish or a silicon mat and bake for 1 hour at 225°F.
- Remove the chips from the oven and place them in the caramel (use to cook the large pineapple slices) then put them again in the oven and cook for 15 minutes.
- Then simply place over a rack and let cool to room temperature until needed.
- For the pineapple crème
- Bring the juice, mixed pineapple and the vanilla pod to a boil in a saucepan then remove from the heat.
- Mix the sugar and the egg yolks with a whisk, until they turn foamy white then add the cornstarch and mix together until well combined.
- Pour 1/3 of the warmed juice mix over the egg mixture and whisk vigorously. Pour the egg mixture into the saucepan with the rest of the juice and continue to whisk over a medium heat.
- Cook until the mixture boils and thickens being careful not to let it burn, and stirring to avoid it to stick to the bottom of the pan.
- Remove from the heat and cover it. Place it in the fridge and allow it to cool until needed.
- Before serving, whip the cream and add it to the pineapple crème for a silky-smooth finish, whisk them together!

I love pineapple, fresh or frozen. If frozen, I eat it just straight out of bag letting to defrost just a little, like ice cream. These 3 ways are delightful, Gaila! I’m going to give a try caramelized pineapple…over vanilla or coconut ice cream that would be fabulous!
