If this is the first time you read one of my posts, then Welcome!! to my virtual kitchen and coffee table chat place.. your opinions are really appreciated do no hesitate to speak out!

One of my favorite guilty pleasures is confit! I have said in the past that everything is better with confit and I truly believe that. This recipe was easy considering I had bake my own rolls (click here for the recipe), so they were super fresh and of course I had leftover confit. The only real work I did was the green apple and carrot slaw, to add some crunchy texture and tartness.

I whipped up really quick a cilantro and lime mayonnaise to add some fresh herbs and a little kick to the slider.

Ingredients

  • For the slaw
  • 2 carrots grated
  • 2 green apples grated
  • 2 chives thinly sliced
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of sesame oil
  • Salt and freshly ground black pepper
  • For the cilantro and lime mayo
  • 3 tablespoons mayo
  • 1/4 bunch of fresh cilantro finely sliced
  • 1 lime the juice
  • Salt and freshly ground black pepper
  • For the confit
  • 1 packet of duck leg confit 2 legs per package or leftovers
  • 12 slider buns 4 for each

Instructions

  • In a large bowl, mix all the ingredients of the slaw and mix well to coat evenly. Reserve on the fridge.
  • In a food processor add all ingredients for the cilantro & lime mayo and mix. Keep in the fridge until service.
  • You can heat the confit until warm and then place it over paper towels to drain all the grease, let it cool over the paper towels. Then shred the confit and reserve until service.
  • Putting together the sliders, first toast the buns to your preference, then generously garnish each bun with duck and slaw. Serve with the cilantro & lime mayo so everybody season their slider.

Si esta es la primera vez que lees una de mis recetas, entonces “Bienvenido” a mi cocina virtual… tus opiniones son muy importantes, no dudes en hablar!

Uno de mis placeres favoritos es el confit de pato! He dicho en el pasado que todo es mejor con confit y realmente creo eso. Esta receta es fácil teniendo en cuenta que había hornear mis propios panecillos (haga clic aquí para obtener la receta), y estaban super frescos y por supuesto tenía sobras de confit. El único verdadero trabajo que hice fue hacer la ensaladilla de manzana verde y zanahoria para agregar algo ácido y crujiente.

Hice también muy rápido una mayonesa de cilantro y limón, para  añadir alguna hierba fresca.

Ingredients

  • Para la ensalada
  • 2 zanahorias ralladas
  • 2 manzanas verdes rallado
  • 2 cebolletas en rodajas finas
  • 1 cucharada de vinagre de arroz
  • 1 cucharada de aceite de ajonjolí sésamo
  • Sal y pimienta recién molida
  • Para el cilantro y lima mayo
  • 3 cucharadas de mayonesa
  • 1/4 manojo de cilantro fresco finamente rebanado
  • 1 limón el jugo
  • Sal y pimienta recién molida
  • Para el confit
  • 1 paquete de piernas de pato confitado 2 piernas por paquete o sobras de confit (2 tazas)
  • 12 panecillos

Instructions

  • En un tazón grande, mezcle todos los ingredientes de la ensalada y mezclar bien para cubrir de manera uniforme. Reservar en el refrigerador.
  • En un procesador de alimentos agregar todos los ingredientes para la mayonesa de cilantro y limón y mezclar. Guarde en el refrigerador hasta el servicio.
  • Puede calentar el confit hasta que esté caliente y luego colocar sobre toallas de papel para drenar toda la grasa, dejar que se enfríe sobre las toallas de papel. Luego deshilachar el confit y reservar hasta el servicio.
  • La elaboración de los sándwiches, primero tostar los panecillos a su preferencia, y luego colocar una cantidad generosa en cada pan de confit y ensalada. Servir con la mayonesa de cilantro & limón.
