Every family has that one recipe that’s passed down through friends, loved ones, and generations. For us, Selwa’s Marinated Roasted Chicken is that dish. Shared with us shortly after our wedding in 2002 by our dear friend Selwa, this recipe has been a beloved staple in our home ever since.
Selwa is the wife of Jamal, my husband’s best friend, and we first met her when she attended our wedding here in the Dominican Republic. Our honeymoon took us to the beautiful Las Terrenas, where we shared unforgettable moments with friends like Eric, Sandrine, Emmanuel, and Carine. Upon our return, we celebrated Selwa’s birthday, and that’s when we first tasted her incredible marinated roasted chicken.
It’s a dish packed with flavors, traditions, and memories—perfect for family dinners or special occasions. This is best chicken marinade we have ever tasted and don’t worry, I’m sure Selwa’s mother, Halima, won’t mind sharing this gem of a recipe with all of you!

Instructions
Prepare the Marinade
- Mix the Marinade: In a large mixing bowl, combine the Dijon mustard, chopped cilantro, parsley, olive oil, chili powder, crushed garlic, kosher salt, and black pepper. Stir until well combined.
- Marinate the Chicken: Add the chicken thighs to the bowl, ensuring each piece is thoroughly coated with the marinade. Cover the bowl with plastic wrap and let it marinate in the fridge for at least 2 hours, or overnight for even better flavor.
- Add Lime Juice: Just before you’re ready to cook, squeeze the fresh lime juice over the marinated chicken.
Grill the Chicken
- Preheat the Grill: Heat your BBQ or grill to medium-high heat.
- Grill the Chicken: Place the marinated chicken thighs on the grill and cook for about 4-5 minutes per side, or until they reach an internal temperature of 165 degrees F. The chicken should be golden brown, cooked through, but still juicy.
Serve and Enjoy
- Serve Immediately: This chicken pairs beautifully with Moroccan tomato and green olive salad, a dish that brings out the fresh and zesty flavors of the marinade. You can find the recipe for this salad and other Moroccan-inspired dishes on my blog.
