Caramelized Onion Stuffed Pork Loin
Cold climate and busy days call out for comfort food! There is nothing better that a hearty, warm meal after a long, difficult day, and this dish is all about that. Comfort.
This is one pan dish, easy to make, if you don’t like caramelized onions you can stuff the pork loin with whatever you prefer. The drippings of the pork, give the mushrooms and potatoes a delicious taste.
Caramelized Onion Stuffed Pork Loin
Ingredients
- 2 1 ⁄2 lbs pork loin
- 2 tablespoons olive oil
- 1 onion sliced thinly
- 1 garlic clove minced
- 1 tablespoon thyme fresh, chopped
- salt and pepper to taste
- 1 tablespoon olive oil
- 4 potatoes
- 8 big mushrooms
Instructions
- Preheat oven to 350°F.
- In a large skillet over medium heat and heat the olive oil. Cook onion and garlic in olive oil for 20 minutes stirring occasionally. Cook until onions turn golden brown. Stir in thyme, salt and pepper. Remove from heat.
- With a butcher knife, carefully open a hole in the middle of the pork loin. Once the caramelized onion has cooled, stuff the pork loin with it. Season well with salt and pepper.
- Chop roughly the potatoes and mushrooms, season with thyme, salt and pepper, place in a roasting pan. Top with the pork loin and drizzle with olive oil. Roast for 1 to 1 1/2 hours until cooked through or until meat thermometer registers 160°F.
- Remove from oven and allow meat to rest for 5 minutes before slicing. Cut into 1 1/2 inch slices and serve with a portion of the mushrooms and potatoes.

Ingredients
- 2 1/2 libras de lomo de cerdo
- 2 cucharadas de aceite de oliva
- 1 cebolla en rodajas finas
- 1 diente de ajo picado
- 1 cucharada de tomillo fresco picado
- Sal y pimienta al gusto
- 1 cucharada de aceite de oliva
- 4 papas
- 8 grandes champiñones
Instructions
- Precaliente el horno a 350 ° F.
- En una sartén grande a fuego medio, caliente el aceite. Cocine la cebolla y el ajo en el aceite de oliva durante 20 minutos, revolviendo ocasionalmente. Cocine hasta que las cebollas se doren. Agregue el tomillo, la sal y la pimienta. Retírelo del calor.
- Con un cuchillo de carnicero, abrir cuidadosamente un agujero en el medio del lomo de cerdo. Una vez que la cebolla caramelizada haya enfriado, rellenar el lomo de cerdo con las cebollas. Sazone bien con sal y pimienta.

I just bought a pork loin the other day and threw it in the freezer because couldn’t think of any new recipes for it and I’m bored with my usual ones. I’m taking it back out to try your recipe. Love the side of potatoes and mushrooms! Yum!! Gotta love one pot meals too 🙂

Flavorful, but mine turned out a little dry by the time the proper temp was reached. Could have used more garlic and would recommend Vidalia onions – so sweet !
Served an au jus which added to the dish.
Steamed broccoli complimented the potatoes and mushrooms.
Ultimately this dish is a keeper allowing you to customize without taking away from the heart of it.
