Pao de Queijo (Brazilian Cheese Bread)

Ingredients

  • 1 cup milk
  • 1 teaspoon salt
  • 2 cups tapioca flour
  • ½ cup oil
  • 2 eggs
  • 1 ½ cup Parmesan cheese

Instructions

  • First, preheat oven to 350 F. The pour oil, milk, and salt into a large saucepan, and place over high heat. When the mixture comes to a boil, remove from heat immediately, and put on a stand up mixer, add the tapioca flour and mix until smooth. Then add the cheese and eggs to the mixture of tapioca until well combined, the mixture will be thick. Place in a mold to make muffins or cupcakes ungreased.
  • Bake in preheated oven until muffins are lightly browned, 25 to 30 minutes.
