Ingredients

  • 2 cups water
  • 2 cups milk
  • 4 eggs
  • 2 tablespoons fresh cilantro chopped
  • 2 tablespoons fresh chives chopped
  • salt to taste
  • 4 slices rustic toasted mix-grain bread cut into cubes

Instructions

  • Chop the scallions and cilantro into small pieces. In a stockpot add the water, coriander, chives, milk and salt. When the soup boils, make a whirlpool with the help of a spoon and then crack the eggs and add them carefully to the soup without breaking the yolk. Let the soup boil for two minutes.
  • Spoon out the eggs, then add some broth. Serve the soup with bread.
