In a cast iron pan, over medium heat, add the olive oil and the potatoes, let them cook for 8 - 10, then they will begin to be tender, add the ham, tomatoes salt and pepper. Cook for another 5 minutes, turn of the heat then add the chives.
In another frying pan, cook the eggs to your liking, mine was fried with a runny yolk.
Serve the potatoes and top with the eggs. Eat right away.
