Ingredients

  • ½ cup or 1 stick unsalted butter
  • ½ cup reserved cooked potato water or just warm water
  • 1 cup milk
  • 1 cup mashed potatoes
  • ½ cup sugar
  • 1 teaspoon salt
  • 2 large eggs
  • 2 packages active-dry yeast
  • 5 - 6 ½ cups bread flour
  • Butter for brushing

Instructions

  • In a large pot filled with water, cook your potatoes until soft, drain water (keep one cup of this water) and then mach the potatoes, for this recipe you will need a cup of mashed potatoes (about 2 potatoes)
  • Then over medium low heat, add the milk and the butter, cook until the butter melts, then add the potato water, let it cool down, when this mixture is still warm sprinkle the yeast over it, let it rest for a few minutes until it gets foamy or bubbly.
  • In a bowl, mix together the yeast mixture with the mashed potatoes; add the sugar, salt and eggs and mix until well combined, then add the flour, this will form a smooth dough. Place the dough in a greased bowl. Cover with greased plastic wrap and let rise in a warm in place until doubled, about 1 hour.
  • Punch down dough, divided into small portions (about 50 g each) then shape each piece into a ball. Place buns in a greased baking pan. Cover with plastic wrap and let rise until doubled, about 30 minutes.
  • Brush rolls with melted butter. Bake at 375 F for 15-20 minutes until golden. Remove from oven and serve warm.
