Preheat oven to 200 C (350 F)
In a food processor add the cauliflower cut in florets, the kale, trimmed and washed, push pulse until you get the desired texture, for me is large crumbs.
In a frying pan add two tablespoons of olive oil and add the cauliflower kale crumbs and cook for 5 – 8 minutes and there’s no liquid left. Let this mixture cool down.
Put the cooled cauliflower kale crumbs in a clean kitchen towel and drain all the liquid. Then in a bowl add egg, cheese, salt and pepper.
Place the kale pizza dough onto a baking tray covered with baking paper.
Using your hand, press the ball to flatten and extend the dough with your finger until it forms a pizza crust. If sticky, slightly oil your hands with olive oil.
Bake for 15-20 minutes until the kale crust is firm and starts to get brown on the sides.
Remove from the oven, add your pizza toppings ingredients starting with sauce then grated cheese. (Any other toppings are welcome)
Return to the oven until the cheese is melted.
Serve hot!
