Easy cauliflower kale pizza crust

Ingredients

  • 1 large head cauliflower
  • 8 stalks kale trimmed
  • 1 egg
  • 1 cup grated Parmesan cheese
  • Salt and pepper

Instructions

  • Preheat oven to 200 C (350 F)
  • In a food processor add the cauliflower cut in florets, the kale, trimmed and washed, push pulse until you get the desired texture, for me is large crumbs.
  • In a frying pan add two tablespoons of olive oil and add the cauliflower kale crumbs and cook for 5 – 8 minutes and there’s no liquid left. Let this mixture cool down.
  • Put the cooled cauliflower kale crumbs in a clean kitchen towel and drain all the liquid. Then in a bowl add egg, cheese, salt and pepper.
  • Place the kale pizza dough onto a baking tray covered with baking paper.
  • Using your hand, press the ball to flatten and extend the dough with your finger until it forms a pizza crust. If sticky, slightly oil your hands with olive oil.
  • Bake for 15-20 minutes until the kale crust is firm and starts to get brown on the sides.
  • Remove from the oven, add your pizza toppings ingredients starting with sauce then grated cheese. (Any other toppings are welcome)
  • Return to the oven until the cheese is melted.
  • Serve hot!
