Corn Pudding

Ingredients

  • 3 tablespoons all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1 ½ teaspoons salt
  • 6 large eggs
  • 1 cup yogurt
  • 1 cup of ricotta cheese
  • ½ cup butter melted
  • 6 cups fresh corn kernels or 3 cans of kernels

Instructions

  • In a bowl, combine flour, sugar, baking powder and salt. Reserve. In another bowl whisk together eggs, yogurt, ricotta cheese and butter, until well combine; then add flour mixture, mixing well until smooth; add in corn. Pour mixture into 9” baking dish.
  • Bake at 350° for 30 minutes or until pudding is set and deep golden. Let stand 5 minutes.
