Grilled Jerk Chicken

Jerk is a style of cooking native to Jamaica in which meat is dry-rubbed or wet marinated with a very hot spice mixture called Jamaican jerk spice. Jerk seasoning is traditionally applied to pork and chicken. 

Ingredients

  • 6 chicken thighs and drumsticks

For jerk marinade

  • 2 tablespoons olive oil or coconut oil
  • ½ tablespoon packed brown sugar
  • ½ tablespoon fresh thyme leaves
  • 1 teaspoons ground allspice
  • 2/4 teaspoon freshly grated nutmeg
  • 3 scallions chopped
  • 3 large garlic cloves chopped
  • 1 small onion chopped
  • 3 fresh Scotch bonnet or habanero stemmed and seeded
  • 2 tablespoons of fresh lime juice
  • Salt and black pepper

Instructions

  • In a food processor chop all marinade ingredients until smooth paste consistency. Rube the chicken with this paste and let this marinate for at least 8 hours even better if left overnight.
  • You can either roast this in the oven or grill it on the BBQ. Perfect dish for summer grilling. Preheat burners on high, then lower the temperature to low. Cook chicken, covered with lid, until cooked through, about 35 to 45 minutes.
