Leek, mushrooms and tomatoes quiche

Ingredients

  • 1 Pastry dough recipe
  • 1 small package of cherry tomatoes
  • 1 small package of mushrooms cut into slices
  • 6 leeks cut into small slices
  • 2 tablespoons of olive oil
  • 1 cup of cream
  • 2 eggs
  • salt and pepper
  • ½ cup of grated parmesan
  • some parsley

Instructions

  • In a frying pan put 1 tablespoon of olive oil, put the leeks, let them sauteed until transparent, then cook the mushroom, to take the moisture off them.
  • Roll out and line a deep 9" tart tin, with a fork mark the bottom so it won't bubble up.
  • In a bowl mix the eggs, cream, salt and pepper and reserve.
  • Pre heat the oven at 400 F or 200 C
  • In the bottom of the quiche spread the leeks, add the mushrooms and place the cherry tomatoes, pour the eggs and cream mixture over the vegetables. Sprinkle wit the Parmesan cheese!
  • Put the quiche in the oven and cook 40 minutes, serve right away!
