In a frying pan put 1 tablespoon of olive oil, put the leeks, let them sauteed until transparent, then cook the mushroom, to take the moisture off them.
Roll out and line a deep 9" tart tin, with a fork mark the bottom so it won't bubble up.
In a bowl mix the eggs, cream, salt and pepper and reserve.
Pre heat the oven at 400 F or 200 C
In the bottom of the quiche spread the leeks, add the mushrooms and place the cherry tomatoes, pour the eggs and cream mixture over the vegetables. Sprinkle wit the Parmesan cheese!
Put the quiche in the oven and cook 40 minutes, serve right away!
