Grilled Mahi Mahi Brochette

Ingredients

  • 1 ½ pounds mahi-mahi or as the locals here in the DR call it Dorado or dorade coryphène in french!
  • 2 garlic cloves crushed
  • salt and freshly ground pepper
  • 2 tablespoons olive oil

Fresh coriander and lime salsa

  • 1 medium onion chopped (½ cup)
  • 1 garlic glove finely chopped
  • ¼ cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 2 tablespoons olive oil
  • ½ teaspoon salt

Instructions

  • Clean your fish and make sure you don't have any fish bones. Divide the fish into 6 fillets. Rub with the garlic and olive oil, sprinkle the salt and pepper. Then divide your fillet into 6 cubes and put them into a brochette bamboo sticks or skewers, you will have two brochettes per guest.

Prepare the salsa

  • Chop the garlic and cilantro, mix with the oil, lime, salt and pepper. Reserve until service.
  • Oil the grill rack before you grill your fish to prevent from sticking. In a medium high flame, grill your fish for about 4 minutes per side. Don't over cook it! it will be dry!
  • We serve this fish with roasted veggies, fries or green plantain chips! And some lime wedges!
