This marinated chicken recipe is best cooked over the grill. The smokey flavors of the BBQ go very well with the marinade flavors.

Ingredients
3tablespoonsDijon mustard
¼cupcilantro chopped
¼cupparsley chopped
4tablespoonsextra virgin olive oil
2tablespoonslime juicefreshly squeezed, just before cooking
1teaspoonProvence herbs
2teaspoonchili powder
2garlic clovescrushed
1teaspoonkosher salt
1teaspoonblack pepperfreshly ground
1 ½ to 2poundschicken thighsskinless and boneless
Instructions
In a bowl, combine cilantro, parsley, olive oil, chili powder, salt, and pepper.
Marinate for at least 2 hours to overnight, in the fridge. Add lime juice just before cooking over the grill.
Heat the BBQ at medium-high heat. Add chicken to the grill and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side. It should be cooked but juicy.
Serve immediately especially with this Moroccan tomato and green olives salad.
