Selwa’s marinated roasted chicken recipe

This marinated chicken recipe is best cooked over the grill. The smokey flavors of the BBQ go very well with the marinade flavors.

Ingredients

  • 3 tablespoons Dijon mustard
  • ¼ cup cilantro chopped
  • ¼ cup parsley chopped
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons lime juice freshly squeezed, just before cooking
  • 1 teaspoon Provence herbs
  • 2 teaspoon chili powder
  • 2 garlic cloves crushed
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper freshly ground
  • 1 ½ to 2 pounds chicken thighs skinless and boneless

Instructions

  • In a bowl, combine cilantro, parsley, olive oil, chili powder, salt, and pepper.
  • Marinate for at least 2 hours to overnight, in the fridge. Add lime juice just before cooking over the grill.
  • Heat the BBQ at medium-high heat. Add chicken to the grill and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side. It should be cooked but juicy.
  • Serve immediately especially with this Moroccan tomato and green olives salad.
