This Selwa’s marinated roasted chicken recipe is a recipe that our friend Selwa shared with us, just after our marriage in 2002, and we have been making it ever since.
This is a family recipe, of course, I am sure Halima, Selwa's mother doesn’t mind sharing it 😊
Selwa is Jamal's (my husband's best friend) wife and we met back in 2002 when they came to our marriage here in the Dominican Republic.
We went together on our honeymoon to "Las Terrenas, with Eric, Sandrine, Emmanuel, and Carine; and had a blast.
When we came back, we celebrated Selwa's birthday and that was the first time we tried her marinated roasted chicken recipe.
She kindly shared it with us. But no matter how long we marinate the chicken, is never as good as hers.
Selwa’s marinated roasted chicken recipe
Ingredients
- 3 tablespoons Dijon mustard
- ¼ cup cilantro chopped
- ¼ cup parsley chopped
- 4 tablespoons extra virgin olive oil
- 2 tablespoons lime juice freshly squeezed, just before cooking
- 1 teaspoon Provence herbs
- 2 teaspoon chili powder
- 2 garlic cloves crushed
- 1 teaspoon kosher salt
- 1 teaspoon black pepper freshly ground
- 1 ½ to 2 pounds chicken thighs skinless and boneless
Instructions
- In a bowl, combine cilantro, parsley, olive oil, chili powder, salt, and pepper.
- Marinate for at least 2 hours to overnight, in the fridge. Add lime juice just before cooking over the grill.
- Heat the BBQ at medium-high heat. Add chicken to the grill and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side. It should be cooked but juicy.
- Serve immediately especially with this Moroccan tomato and green olives salad.
