Celery root and stewed salami baskets
Ingredients
- 1 large piece of celery root 1 pound, grated
- 6 slices of salami of your choice cut into cubes
- Vegetables for the stew: garlic onion, green peppers
- 2 tablespoons of tomato puree
- Salt and pepper to taste
- 3 tablespoons avocado oil ?
Instructions
- I grated the celery root and seasoned it with salt and pepper.
- I painted with oil my muffin/cupcake tin and covered the sides and bottom with the grated celery root.
- Preheat the oven at 375 and bake for 10 to 15 minutes or until golden brown.
- While waiting, heat some oil in a fry pan, and then add all the veggies, when transparent and fragrant add the salami and tomato puree, if it’s too thick add some water (¼ cup), let it simmer for 10 minutes at medium low.
- When your baskets are ready take them out of the muffin tin carefully with an spatula.
- Filled them with the stewed salami.
