Celery root and stewed salami baskets

This delicious Dominican street food is easy to make and full of flavor. Simply stew the Dominican salami in a mix of tomatoes, green pepper, onions, garlic, and tomato purée. Then stuff the mixture into celery root cups and you're good to go. Serve with your favorite foods and enjoy!

Ingredients

  • 1 large piece of celery root 1 pound, grated
  • 6 slices of salami of your choice cut into cubes
  • Vegetables for the stew: garlic onion, green peppers
  • 2 tablespoons of tomato puree
  • Salt and pepper to taste
  • 3 tablespoons avocado oil ?

Instructions

  • I grated the celery root and seasoned it with salt and pepper.
  • I painted with oil my muffin/cupcake tin and covered the sides and bottom with the grated celery root.
  • Preheat the oven at 375 and bake for 10 to 15 minutes or until golden brown.
  • While waiting, heat some oil in a fry pan, and then add all the veggies, when transparent and fragrant add the salami and tomato puree, if it’s too thick add some water (¼ cup), let it simmer for 10 minutes at medium low.
  • When your baskets are ready take them out of the muffin tin carefully with an spatula.
  • Filled them with the stewed salami.

Avocado or guacamole
Coriander leaves
Grated cheese
Hot sauce
