  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons tomato puree
  • Salt and pepper to taste
  • 1/4 cup water (if needed)

This delicious Dominican street food is easy to make and full of flavor. Simply stew the Dominican salami in a mix of tomatoes, green pepper, onions, garlic, and tomato purée. Then stuff the mixture into celery root cups and you're good to go. Serve with your favorite foods and enjoy!

Ingredients

For the Baskets:

  • 1 large celery root approx. 1 pound, grated
  • Salt and pepper to taste
  • 3 tablespoons avocado oil or any oil of your choice

For the Stewed Salami:

  • 6 slices of your favorite Dominican salami cut into cubes
  • 1 onion chopped
  • 1 green pepper chopped
  • 2 cloves of garlic minced
  • 2 tablespoons tomato puree
  • Salt and pepper to taste
  • 1/4 cup water if needed

Instructions

Preparing the cups:

  • Grate the Celery Root: Grate the celery root and season it generously with salt and pepper.
  • Prepare the Muffin Tin: Grease a muffin or cupcake tin with oil to prevent sticking.
  • Form the cups: Press the grated celery root into the muffin tin, covering the sides and bottom to form small cups.
  • Bake: Preheat your oven to 375°F (190°C). Bake the celery root cups for 10-15 minutes or until they are golden brown and crispy.

Making the Stewed Salami:

  • Heat the Oil: In a large frying pan, heat the avocado oil over medium heat.
  • Cook the Veggies: Add the chopped onion, green pepper, and minced garlic. Sauté until the vegetables are translucent and fragrant, about 5 minutes.
  • Add the Salami: Stir in the cubed salami and cook for another 5 minutes until the salami starts to brown.
  • Tomato Puree: Add the tomato puree and stir well. If the mixture is too thick, add 1/4 cup of water. Let it simmer for about 10 minutes on medium-low heat. Season with salt and pepper to taste.

Assemble the cups:

  • Remove the Baskets: Carefully take the baked celery root baskets out of the muffin tin using a spatula.
  • Fill the Baskets: Spoon the stewed salami mixture into each basket, filling them generously.

Serving Suggestions:

  • Garnish: Add a sprinkle of fresh parsley or cilantro for an extra burst of flavor and color.
  • Side Dish: Serve with a simple green salad or roasted vegetables for a complete meal.
  • Alternative Filling: Try filling the baskets with sautéed mushrooms and onions for a vegetarian option, or use tofu for a vegan twist.
