Preparing the cups:
Grate the Celery Root: Grate the celery root and season it generously with salt and pepper.
Prepare the Muffin Tin: Grease a muffin or cupcake tin with oil to prevent sticking.
Form the cups: Press the grated celery root into the muffin tin, covering the sides and bottom to form small cups.
Bake: Preheat your oven to 375°F (190°C). Bake the celery root cups for 10-15 minutes or until they are golden brown and crispy.
Making the Stewed Salami:
Heat the Oil: In a large frying pan, heat the avocado oil over medium heat.
Cook the Veggies: Add the chopped onion, green pepper, and minced garlic. Sauté until the vegetables are translucent and fragrant, about 5 minutes.
Add the Salami: Stir in the cubed salami and cook for another 5 minutes until the salami starts to brown.
Tomato Puree: Add the tomato puree and stir well. If the mixture is too thick, add 1/4 cup of water. Let it simmer for about 10 minutes on medium-low heat. Season with salt and pepper to taste.
Assemble the cups:
Remove the Baskets: Carefully take the baked celery root baskets out of the muffin tin using a spatula.
Fill the Baskets: Spoon the stewed salami mixture into each basket, filling them generously.
Serving Suggestions:
Garnish: Add a sprinkle of fresh parsley or cilantro for an extra burst of flavor and color.
Side Dish: Serve with a simple green salad or roasted vegetables for a complete meal.
Alternative Filling: Try filling the baskets with sautéed mushrooms and onions for a vegetarian option, or use tofu for a vegan twist.
