Classic Fish Ceviche

Ceviche is one of my husband’s favorite weekly fixes! He loves the freshness of this dish and the feeling of eating healthy and light. During Lent in the Dominican Republic, there’s an increase in fish consumption, so we tend to try different recipes. This classic fish ceviche is easy and simple to make, with a base of fresh, high-quality ingredients.

Ingredients

  • 1.5 lbs firm white fish fillets, cubed (Sea bass or Mahi Mahi)
  • 2 teaspoons fresh cilantro, chopped
  • 1 green pepper, seeded and chopped (you can make it a jalapeno if you like spicy)
  • 10-15 limes, freshly squeezed and strained to remove pulp (enough to cover fish)
  • 1 red onion, thinly sliced
  • 2 tablespoons extra-virgin olive oil
  • 2 tomatoes, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

1. Marinate the Fish

  • Prepare the Fish: In a baking dish, combine the cubed fish, salt, pepper, and lime juice. Use enough juice to cover the fish completely.
  • Marinate for 30 minutes: Cover and refrigerate. You know it’s ready when the fish cubes no longer look raw when cut in half. Drain in a colander.

2. Prepare the Ceviche

  • Mix Ingredients: In a large bowl, mix together the marinated fish, tomatoes, green peppers, cilantro, lime juice, olive oil, salt, and pepper.

3. Serve the Ceviche

  • Plate and Garnish: Place the ceviche onto individual plates. Garnish with additional cilantro leaves.
  • Accompaniments: Serve with roasted casabe (yucca flatbread) or corn tortillas.
