Instructions

Prepare the Ingredients

    Dice and Chop:

    • Finely dice the shallots.
    • Chop the scallions, separating the white and green parts.
    • Place the white parts of the scallions into a small bowl.

    Make the Scallion Oil

      Combine and Mix:

      • Add soy sauce and salt to the bowl with the scallions. Mix well.

      Heat the Oil:

      • Heat the neutral oil in a small saucepan over medium heat for about 3 minutes. To check if the oil is hot enough, place the handle of a wooden spoon or chopstick into the oil—if it bubbles vigorously, it’s ready.

      Infuse the Oil:

      • Carefully pour the hot oil into the bowl with the shallots and scallions. Watch out for splatters! Enjoy the satisfying sizzle and let it cool for a few minutes.

      Finish and Store:

      • Once slightly cooled, stir in the green parts of the scallions. Let the mixture cool completely, then transfer to a clean jar or sealable container and store in the fridge.
