A Midweek Inspiration

This is the kind of dinner that feels like you planned ahead, even when you didn’t.
Juicy pork chops roast alongside Brussels sprouts, sweet-tart apples, and smoky bacon. Everything cooks on one tray, the veggies soak up the pan juices, and the apples turn jammy around the edges.
It’s cozy, balanced, and perfect for a busy weeknight.
Protein Score
Protein per serving: 34g
Category: ???? Powerhouse (25g+)
Pork chops deliver strong protein on their own, and bacon adds extra flavor (and a little more protein) so this meal lands firmly in Powerhouse territory.
Why this combo works:
- Protein anchor + high-fiber veg = more stable energy and better satiety.
- Brussels sprouts can taste bitter when undercooked, but roasting them with bacon fat and pork juices balances the flavor.
- Apples add acidity and sweetness without needing sugary sauces.
This is a “real food” sheet pan meal that hits flavor and structure at the same time.Plus, it's gluten-free and low-carb, making it suitable for various dietary preferences.

Sheet pan pork chops, Brussels sprouts, and apples
Ingredients
- 4 pork chops bone-in preferred, boneless works
- 16 oz Brussels sprouts halved
- 2 apples cut into wedges (Granny Smith or Honeycrisp)
- 6 bacon strips cut into small pieces
- 1 onion julienned
- 1 clove garlic crushed
- 2 tablespoon olive oil
- 5 sprigs fresh thyme
- Salt and pepper to taste
- Optional: 1 tablespoon Dijon mustard great with pork + apples
Instructions
Preheat
- Preheat oven to 425°F (220°C).
- (425°F gives better browning than 350°F for sheet pan roasting.)
- Line a large sheet pan with parchment or foil.
Toss the Veg
- On the sheet pan, toss Brussels sprouts, apples, onion, garlic, bacon, olive oil, salt, pepper, and thyme.
- Spread in an even layer.
Roast (Round 1)
- Roast for 15 minutes to start crisping the sprouts and rendering bacon.
Add Pork Chops
- Push veggies to make space and add pork chops to the pan. Season both sides with salt and pepper.
- Return to oven and roast 15 to 20 minutes, until pork reaches:
- 145°F (63°C) for juicy pork (recommended)
- Let rest 5 minutes before serving.
Serve
- Plate pork with a generous scoop of Brussels sprouts, apples, onions, and bacon. Spoon pan juices over everything.

Texture & Flavor Guard
A few things to expect:
- Brussels sprouts get crisp on the outside and tender inside when spread in a single layer.
- Apples soften and caramelize, but they will not stay crunchy (that’s the point).
- Pork chops stay juicy if you don’t overcook. Use a thermometer if you can.
Key tip: if the tray is crowded, everything steams. Use a big sheet pan.High-Protein Pairing Table
| Pair With | Result |
|---|---|
| Simple arugula salad | Bright, fresh contrast |
| Greek yogurt sauce | Adds protein + creamy balance |
| Roasted cauliflower mash | Cozy, lower-carb side |
| Extra Brussels sprouts | More fiber + volume |
Protein Boost Options
- Want to push this even higher while keeping it simple?
- Add extra Brussels sprouts and reduce apple portion if you want lower carbs.
- Add a second pork chop for high-protein days (Powerhouse++).
- Serve with a side of Greek yogurt or cottage cheese (easy protein bump).

Storage & Meal Prep Tips
- Fridge: up to 3 days in an airtight container
- Reheat: oven at 350°F (180°C) for about 10 minutes (best texture)
- Microwave works, but sprouts soften.
Meal prep move: roast the Brussels sprouts + onions + bacon ahead, then cook pork fresh.
