This Sheet Pan Pork Chops, Brussels Sprouts, and Apples recipe was inspired by my midweek trip to the supermarket, where I decide what fresh produce to use for the coming week's menu. This dish is not only delicious but also incredibly easy to prepare. It's perfect for those busy weeknights when you want something nutritious and flavorful without spending hours in the kitchen.

Ingredients

  • 4 pork chops bone-in preferred, boneless works
  • 16 oz Brussels sprouts halved
  • 2 apples cut into wedges (Granny Smith or Honeycrisp)
  • 6 bacon strips cut into small pieces
  • 1 onion julienned
  • 1 clove garlic crushed
  • 2 tablespoon olive oil
  • 5 sprigs fresh thyme
  • Salt and pepper to taste
  • Optional: 1 tablespoon Dijon mustard great with pork + apples

Instructions

Preheat

  • Preheat oven to 425°F (220°C).
  • (425°F gives better browning than 350°F for sheet pan roasting.)
  • Line a large sheet pan with parchment or foil.

Toss the Veg

  • On the sheet pan, toss Brussels sprouts, apples, onion, garlic, bacon, olive oil, salt, pepper, and thyme.
  • Spread in an even layer.

Roast (Round 1)

  • Roast for 15 minutes to start crisping the sprouts and rendering bacon.

Add Pork Chops

  • Push veggies to make space and add pork chops to the pan. Season both sides with salt and pepper.
  • Return to oven and roast 15 to 20 minutes, until pork reaches:
  • 145°F (63°C) for juicy pork (recommended)
  • Let rest 5 minutes before serving.

Serve

  • Plate pork with a generous scoop of Brussels sprouts, apples, onions, and bacon. Spoon pan juices over everything.
