In a saucepan, add oil and cook the onion. Add the rice, stir well until all the rice is covered by a thin layer of oil, then add the wine and broth, cover well and get over low heat, simmer for 20 minutes.
In a separate pan, fry the red pepper squares and reserve. Then peel and cut the ripe plantain banana. Fry the plantains in a little hot oil and reserve. And then the same for the bacon.
After the rice is cooked in a big frying pan mix all the ingredients together. Mix well. Increase the heat and cook 3 to 5 minutes. Remove from heat and stir in almonds and some chives.
