Preheat griddle to 350°F / medium heat. Lightly oil.
In a bowl, whisk flour, baking powder, baking soda, and salt.
In another bowl, mix honey, vanilla, oil, and warm water.
Combine wet and dry ingredients gently.
Fold in stiff egg whites carefully to keep air in the batter.
Ladle onto hot griddle.
Cook 3–4 minutes until bubbles form and edges look set.
Flip and cook another 2–3 minutes until golden.
Serve warm.
