Jerk is a style of cooking native to Jamaica in which meat is dry-rubbed or wet marinated with a very hot spice mixture called Jamaican jerk spice. Jerk seasoning is traditionally applied to pork and chicken.

Ingredients
6chicken thighs and drumsticks
For jerk marinade
2tablespoonsolive oil or coconut oil
1/2tablespoonpacked brown sugar
1/2tablespoonfresh thyme leaves
1teaspoonsground allspice
2/4teaspoonfreshly grated nutmeg
3scallionschopped
3large garlic cloveschopped
1small onionchopped
3fresh Scotch bonnet or habanerostemmed and seeded
2tablespoonsof fresh lime juice
Salt and black pepper
Instructions
In a food processor chop all marinade ingredients until smooth paste consistency. Rube the chicken with this paste and let this marinate for at least 8 hours even better if left overnight.
You can either roast this in the oven or grill it on the BBQ. Perfect dish for summer grilling. Preheat burners on high, then lower the temperature to low. Cook chicken, covered with lid, until cooked through, about 35 to 45 minutes.
