1/2cupdry white wine such as a California chardonnay
2tspminced Garlic 2 peeled medium cloves
1/2tspgrated nutmeg or ¼ground nutmeg

Instructions
Set for 10 minutes on Sauté. While the pot heats up, pour in some wine, garlic and nutmeg; continue heating until simmering 5 more minutes.
Mix all the cheeses with the arrow root and pepper, then add to the simmering wine, keep stirring so cheese doesn't burn at bottom of pan. Cook, stirring all the while, until the cheese melts and the mixture starts to bubble, about 2 minutes.
Turn off the heat and serve at once with cubed low-carb, keto chips and broccoli and cauliflower florets.
