Blueberries and honey granola yogurt parfait
So I found fresh blueberries which here occurs very rarely (I live in the DR capital's Santo Domingo, in the middle of the Caribbean) and want it to serve them fresh without altering their flavor, so took the opportunity to use my honey granola recipe and served them with yogurt.
I use local honey and sometimes I change that and use Agave syrup! my family appreciates both of them, I prefer honey.
Honey Granola

Ingredients
- 3 cups 300 grams oats (not instant)
- ¾ cup 75 grams almond flakes
- ½ cup 45 grams Flaxseed
- ½ cup 45 grams sesame seeds
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 tablespoons of the oil of your choice mine is coconut for all his benefits or two tablespoons of butter
- ½ cup 120 ml maple syrup (preferably a dark amber)
- 1 cup dried fruit cranberries, cherries, prunes, raisins, figs (optional)
Instructions
- Pre heat the oven at 300 F or 165 C.
- In a large bowl mix all dry ingredients together, mix well, then add all the liquid ingredients, make sure all dry ingredients are coated with a thin layer of liquid. Place the mixture in a baking tray with line with parchment paper, bake for 35 to 45 minutes or until golden brown.
- Let it cool for 5 minutes and then pack the granola in an air tight container. Keep it in a fresh cool place, it will be good for 15-21 days.

Then the rest is really easy, I took a Greek Yogurt and divided in two, put the first half on the bottom of my glass, add 1 big spoonful of my Honey Granola, added some fresh berries and a teaspoon of Honey and repeated with the rest of the ingredients, so very easy, my husband and eldest loved the ensemble.
